Anything they want to. :-) Most side dishes are or can very easily be made vegetarian. But for the main event, if you want something lovely to put in the middle of the table?
Consider veggie loaves. Try timbales (Generally not vegan, but never mind). A charlotte might be nice. Or you could stuff vegetables with stuffing. Do a big pumpkin for a lot of people, individual squashes if it's a smaller group. Seitan, if you can find it and know how to use it, would be excellent. (However, it's like a lot of other vegetarian foods... when they're good, they're very, VERY good; but when they're bad... well, that's why so many non-vegetarians have misconceptions about what we eat.)

stuffed celery
fresh fruit platter
We all snack on these while the rest of dinner cooks
Salad
Pickles, olives, pickled tomatoes, and coctail onions
maybe vegetable soup
Quorn turkey roast (most years I make oregano chick with heartline chick)
mashed potatoes
mushroom gravy
home made cranberry sauce
some random green veggie not sure what I'm making yet
sweetpotato dish not sure which one yet
apple pie
pumpkin pie
sweetpotato pie
chocolate pie
coffee
apple cider
wine

Stuffing either homemade or a mix with no meat products, mashed potatoes w/o meat gravy, yams (no marshmallows), green beans, cranberry sauce, rolls, pie, etc. Most traditional Thanksgiving foods beside turkey.

You can eat any vegetarian dish you like, you do not have to pretend to eat a turkey and eat the ugly tasting turkey tofu.

You don't have to stick with traditional thanksgiving food made vegetarian. Why not make your favorite dish, or try a different countries cuisine, like Mediterranean, they eat a lot of vegetarian type foods and are good! Have a Happy Thanksgiving!

Veggie lasagna. My family does the Italian thing and lasagna has been a part of my Thanksgivings since I can remember. As long as you're cool with cheese, it's a nice filling alternative.

Anything but tofu turkey! How about some Indian food? I make a mean picadillo with tofu crumbles. Don't limit yourself to traditional foods -- make and eat what you want. Vegie lasagne...vegie stir-fry, etc.

Nothing says you have to eat a turkey alternative. You can make anything you want. How a about a vegetable lasagna or a vegetable stew?

I had a horrible first experience with Tofurky my first year but last year I made it with the creole injectors and it was wonderful. Make sure you baste if frequently. Other things include stuffing, green bean cassarole, pumpkin pie, yams, apple pie, corn, cornbread, mashed potatos, maccaroni and cheese, fruit salad, wild rice, and cranberries (I think they are more for decoration because no one eats them.)
