Avoid gelatin--Jell-O is gelatin, but other foods that have gelatin will indicate on the ingredients. You want to avoid rennet, which is often used to coagulate cheeses. Rennet is made from the fourth stomach of veal calves--ick. It's processed to make a coagulating salt. If you're ovo-lacto, you can eat most soy cheeses (many have casein, so they aren't vegan).

And of course, avoid meat stocks.

Lots of things have gelatin in them; you have to read the ingredients list!

There are different types of vegetarians. Some won't even eat dairy products, because they come from animals.

A lot of candy has gelatin. Marshmallows and jello do too.
