i looove tofu, i like it with a mixture of :
nutritional yeast, curry, adobo (salt and pepper) and dill then fry it, and drizzle with soy sauce, its like the best confort food ever! lol. yum

Mushroom & Cheese Macaroni
Ingredients

400g wholewheat macoroni
60g butter or margarine
2tbs chopped parsley
450g mushrooms
60g grated cheese



Method

1. Cook macaroni according to manufacturer's instructions.
Slice mushrooms and fry in the fat for 8 mins then add the parsley.
Drain macaroni and mushrooms and toss together lightly.
2. Serve sprinkled with grated cheese.

THis is a great meal and very easy and healthy

My fave recipe from www.vegweb.com:

Lemon Tofu with Capers

1 lb tofu (freeze and press), sliced
oil for cooking
1/4 cup nutritional yeast
2 tbsp flour
1/4 cup lemon juice
2 tbsp soy sauce or tamari
1 tbsp balsamic vinegar (but cider vinegar will do in a pinch)
chopped scallions/green onions
half a bell pepper, sliced (or a couple handfuls of frozen bell peppers)
1 tbsp capers

Saute tofu in oil unti it begins browning. Add nutritional yeast and flour and stir to coat. Cook until tofu slices are coated. Add lemon juice, soy sauce, and vinegar and cook until liquid is absorbed. Add veggies and cook until they are tender-crisp. Serve.

I love pasta

Garlic, Olive & Tomato Pasta


Equipment:
Saucepan or frypan.

Ingredients
1 tablespoon olive oil
2 garlic cloves, minced
Pinch hot chili flakes
1 cup grape tomatoes, cut in half
1/2 cup kalamata (black) olives, pitted and coarsely chopped
Small handful shredded fresh basil or parsley
(or 1/4 teaspoon each basil and/or parsley, dried)
1 teaspoon finely-grated lemon peel.

Whatever pasta shape you prefer
Directions
Put water on to boil for pasta, then cook pasta until al dente or desired consistency. (Rotini works well).

Heat olive oil in large frying pan (or saucepan) over medium heat. Add garlic and chili flakes and cook for 1 minute, until oil becomes fragrant. Add olives and tomatoes and stir until hot, about 2 minutes. Remove from heat. Toss with herbs and lemon peel, then toss with drained pasta and serve.

Grilled zuchinni

Cut zuchinni lengthwise, drizzle with olive oil, sprinkle with Cavender's or similar seasoning, grill about five minutes per side over medium hot grill.

Serve hot.

1 can diced tomatoes (undrained)
2 cans of beans (kidney, garbanzo are the best)
Empty into a pot add water and spices as needed and simmer until hot.

Enjoy :)

optional: you can add some veggies too like diced potatoes or carrots.

Sprouted sesame seeds and fresh apple pulp from the juicer with the juice mixed back in. If you don't have time to juice you can use applesauce. It is like cereal and very filling.
