With all this talk that we are throwing out too much food, what can I do with my soggy leftover veg. PS no meat

Stick it in a pan with 3 veg stock cubes and water, bring to boil and simmer. Don't forget to add pepper.

Serve with Crusty bread.

Turn the leftovers into a soup.
Mix them up with a sauce, top with mash.
Use them to make a vegetable lasagne.
Wrap them in pastry for a veggie pastie.
Add beans, peas, lentils etc or cheese, to any of the above.

Mix with fresh onion and mushrooms that have been sauteed until soft-add tomato juice and some seasonings that you like-serve over rice, barley or qiunoa.
In the future cook fewer veggies.

easy make bubble and squeak Yummy!!...

you can either just mash it all up and stick in a frying pan and heat and brown on each side...

or you can make little patie type things by mashing the veg up grab a bit with your hand make a bal and press flat to about a inch thick, cover with flour and stik it in a frying pan

My grandmother used to have a really environmentally-friendly, zero-impact way of dealing with leftover vegetables like this.

She would feed them to the chickens and/or pigs, then we would have either fried chicken or pork chops.

Recycling, the way mother nature intended.

have a great recipe for veggie stew and veggie pie but i also have a responsibility to stop you throwing your life away on this stupid and irrelevant life style so i am not going to tell lol
