Well, they had no sugar (not until the discovery of the Americas), so honey was a delicacy. Bees were, therefore, extremely important, and people cultivated their hives, not unlike today, for their honey.
Because there was no way to refrigerate meats, poultry, fish, etc. then, spices were used to camouflage the often spoiled flavors of their food. Naturally, spices were used to preserve many food products as well.
