Well...it won't really be the same thing...but here is some of the stuff I do:
1- Use whole wheat instead of white flour (can't do it w/ everything)
2- Use fat free milk instead of whole
3- Use egg substitute instead of whole eggs (the cornbread will turn out as good)
4- If you make greens, use smoked turkey bacon
5- Use canola oil instead of butter (can't do it with everything)
6- Have smoked turkey instead of ham
7- I bake my catfish, then once it's almost done, I lightly fry it... that way it'll suck in less oil and still be somewhat fried.
8- Reduce salt and substitute it with herbs or spices
9- Use fresh fruit and veggies---the canned ones are high on sodium
10- Grill or roast chicken instead of deep frying & remove the skin
Although I wouldn't try this on anyone you want to impress because it won't taste the same and they're going to blame it on your lack of cooking skills LOL

sure, you can substitute things and not deep fry. you can use chicken broths, you can use low sodium products, and use smoked turkey instead of pork. you can use low fat items and you can always use organic products. it would be best to not buy premade or premixed products either. if you search the net, you will find tons of recipes that offer lighter versions of it. in fact, go to this site, and you should find a bunch of recipes that you can use. it's free and it's a good site. i use it all the time. good luck.

of course!
just leave out the ham hocks and use smoked turkey legs to season greens and beans,
bake or broil instead of fry,
don't add salt to anything,
and only put a little on your plate and don't go back for seconds.
