definately the amount of garlic is misconcseption, only italian restaurants in the US use that much garlic. In Italy we use it to flavor the oil while cooking but not eat it.
If you are looking for detailed instruction and recepies for real italian food, do not waste your time and money on any cookbooks from those so called "celebrity chefs", look on the internet for italian sites with english translations like http://www.gamberorosso.it/portaleEng/Homepage/homepage

I kind of disagree with the "a lot of" garlic comment.
My coworkers are Italian (here for a year from Italy) they are grossed out by the amount of garlic "Italian" restaurants put in food here.

The way they cook is very simple - a little garlic sometimes, but mainly fresh herbs, olive oil and white wine.

As to a cookbook reference, I'd recommend looking at Mario Batali's cookbooks over Rachel Ray's.

Well most Italians use lots of garlic in there cooking and olive oil. I would suggest a Rachael Ray cookbook or try her web site for some great recipes.
