ZUCCHINI FRITTERS WHICH YOU GRATE LET DRAIN IN COLANDER 10 MINUTES AND ADD AN ONION,SALT, PEPPER, 1 EGG, AND ENOUGH FLOUR TO BIND AND FRY 3.TOMATOS AND I STUFF THEM WITH GRATED VEGETABLES ,CARROT, SCALLIONS, CHOPPED OLIVES,CILANTRO,SUMMER SQUASH, ADD OLIVE OIL ,LEMON,AND SOME CHEESE , MANJEGO OR GOUDA, TOSS AND STUFF TOMATOS,IF ALSO COLD MAKE A SIMPLE VEGGIE SOUP WITH NOODLES TAKES 1 HOUR FOR ALL OF THIS, NAMASTE

Okay, get some hummus, some pita bread, and a platter of crudites (raw veggies). Also get some chips and salsa. Your guests can dip the veggies in the salsa or the hummus. Amy's makes vegetarian chili, and you can heat that up and stick it in bowls, or your guests can pour it over the chips. Think simple foods that you can just put out on the table. Tasty Bite makes Indian entrees, many of the vegetarian or vegan. You can just dump them in a bowl and heat them up. They're shelf-stable, so they'll be in the Indian foods aisle of a grocery store.
I'm suggesting a buffet style, as it will be easier to grab bites while you're doing the henna.
