"Crunchy Vegetable Wraps"
4 Tbsp. Tofutti cream cheese, your favorite flavor (or any nondairy cream cheese)
4 10-inch flour tortillas
1 cup shredded spinach
1/4 cup alfalfa sprouts
1/2 cup shredded red cabbage
1/2 cup sliced avocado
1/4 cup chopped tomatoes
1/2 cup diced cucumbers
2 Tbsp. finely diced red onion
Salt and pepper, to taste
-Spread one tablespoon of cream cheese over each tortilla.
-Sprinkle an even amount of the remaining ingredients on each wrap; roll up.
*Makes 4
"Cup-A-Lasagna"
Whole grain flour tortillas
Tomato sauce
Grated soy cheese
Grated vegan Parmesan
Chopped raw spinach
-Break the flour tortilla into pieces the size of the thermos bottom.
-Heat the sauce very hot. Layer tortillas, cheeses, sauce and spinach, which will melt together nicely.
-Cap quickly and by lunchtime you’ll have a warm, melty lasagna.
"Cucumber Hummus Sandwich"
2 slices vegan bread
Dijon mustard
leaf lettuce
1/2 cup hummus
thinly sliced cucumber
sliced tomato1 teaspoon balsamic vinegar
1 teaspoon grated dairy free parmesan cheese
-Spread both slices of vegan bread with dijon mustard.
-Place lettuce on one slice of vegan bread.
-Spread the hummus on the lettuce. (This prevents the bread from getting soggy if you take the sandwich to work).
-Lay the cucumber slices on top of the hummus and the tomato slices on top of the cucumber.
-Drizzle the balsamic vinegar over the tomatoes.
-Sprinkle the parmesan cheese over all.
-Close the sandwich, cut in half, and enjoy.
"Grilled Vegetable and Humus Sandwich"
*Use any vegetable
-Preheat grill; grill vegetables.
-Spread humus on baguette.
-Top with vegetables.
"Pasta Salad"
1 Cup Rotelle (Wagon Wheels), or Small Shells
1 Cups Small Broccoli Florets
½ Large Carrot Slices
1/4 Cup Cooked Corn Kernels
1/3 Cup Natural Low Fat Dressing
Salt To Taste
-Cook the pasta according to package., drain and allow to cool.
-Steam broccoli and carrots until slightly tender.
-When all pasta and vegetables have cooled combine in a bowl.
-Season to taste.

How about soups in a thermos or pasta salad? I don't know much about a vegan diet but I pack my daughter's lunch every day since the school food is so bad. I try to do healthy things like fruit salad, wraps, vegetable salads, meatless sandwiches. She uses her thermos a lot.

Seems like you could make your own salad and put it in a bowl with cling-wrap across the top.

i like to bring veggie burgers, or side salad from burger king. some quick snack like quakers rice snacks or a pack of carrots and ranch dip. and arizona green tea.
