Im interested to know how you get your food so quickly at a chinese?
Even if it was microwaved I couldnt make all the dishes I had last night in the microwave at home in that time.
How do they do it?
and if they do microwave it the freezer or fridge would have to be massive to accommodate all the hunderds of dishes they servee up.

My family owns a chinese restaurant. The reason why the food is prepared so fast is because the dishes are so simple. Just look at the ingredients. They really don't take that long to cook. Plus in Chinese restaurants, a wok is used. A wok gets really hot so cooking food is much faster. All you need to do is prep the ingredients beforehand and when an order comes in, just put the ingredients in the wok and a couple of minutes later, you have food.

A couple things that they do make the cooking faster.
Most of the food is not precooked, except for the soup, rice and the generic fried rice that goes out with the lunch specials.

1. Mise en place - all the food is cut to size, seasoned and ready to cook.

2. The cooking method.
The wok is very very hot and cooks food quickly.
Also, a lot of the food is deep fried which cooks food quickly especially since the food is thinly cut.

80% of the cooking of chinese food is in the preparation (Chopping the stuff up into strips etc)

so they cook so fasy because everything is already prepared - all they have to do is throw the different bits into a wok, add some spices and cook away in 3 minutes.

tihs all stems from a need to cook fast so as to preserve fuel way back.

If cooking chinese food at home you need to ensure your ingredients are prepared and ready to go, so that is the same practice they follow in a chinese fast food. And their meat and vegetables are sliced finely so it doesnt take so long to cook.

Most chinese foods would be healthier than all fast foods like McDonalds or Wendys, but some chinese foods without their heavy sauses would actually be really healthy.

he foods are prepped "chopsticks" portions meaning cut up and sliced thinly. then stir fried in very hot pre heated "woks" (up to 500 degrees in some restaurants). the key to cooking in these high temps is the stir frying.. continuosly tossing and stirring the food until it is cooked just right. Veggies stay crisp, meats and sea foods not over cooked, For soups, they usually have several pots of broth continuosly boiling. They just add the various ingredxients (seafood/meat/veggies) to create the soup.

Note: these dishes are designed for quick, fast food type takeout restaurants and are usually good but not great. Some chinese imperial banquets takes days just to prepare let alone cook.

Lots of people working to cook the food.

They may also have it pre-cooked and just dish it out when someone orders it.

A bit like the way an all-you-can-eat restaurent is set out. All the food is cooked and you just get different types and chuck it on a plate.

They do some dishes like stirfries where it involves a lot of oil and flabours at high temperature.

Everything is usually prepared in advance (soaked, marinated, etc) and on hand to throw together. Takes practice!
