Geologist is a good choice.
Land surveyor
You could get a job with NOLS (nationaloutdoor leadership school) or Outward bound.
majors for those would be environmental or recreactional education. Some colleges have programs where you can create your own major.
You could be an "adventure travel" guide and lead other people into the hills.
I am biased towards the jobs where you can teach and share what you with others.

Skip college. Why waste your parents' money?
Really, there is NO reason whatsoever to spend time in a classroom. You can make a good living as a guide so as long as you don't have college loans to pay back.
I pay my guides $10/hour and my Full timers usually clock 40 hours a week hiking, kayaking, & biking. Rock guides make a bit more. So say you make $20K a year. That's not bad if you don't have to make a $300 a month payment to the Student Loan company.
Same goes for ski instructors, river guides, etc. Take a few courses with NOLS or a similar outfit, a WFR course, Maybe an LNT Master course...etc. Get your accreditations on your own.
I see resumes all of the time for kids just graduating with an Outdoor Rec or a Parks Management degree applying for seasonal or $10/guide jobs. This is what this industry is about...seasonal and $10/hour jobs. Not something worth going to college for.
The better paying jobs are slim pickin's.

The obvious answer is to become a guide. If you become a guide, you are always outdoors, teaching people how to rock climb or just showing them how to conquer a certain climb or mountain. If you are really interested visit this site: http://www.amga.com/02_programs/index.php
This is going to cost about $3,600 which is cheaper than college, but you are probably not going to get as much as a really degree. However, if you become really good than people will pay more.

Geography or Geology seem like the most obvious. Photography and Journalism might to take you there.
Or become a doctor or lawyer so you can finance travel abroad :)
