My basic stuffing, I just do from my head, but this is it...I melt some butter and add chopped onion and sliced celery and then cook on medium heat until softened. Add some chicken broth (or vegetable broth works too) and simmer a bit - about 15 minutes or so, to concentrate the flavors. Add some herbed bread cube stuffing and stir until moistened but not soggy, adding more stock if necessary, then bake in a casserole dish (or stuff your bird).
You can add a bit of ground sage if you like, or water chestnuts, or chopped giblets to this - it really depends on your taste!

Brown 1 IB. of hamburg. Strain fat in strainer. Add cooked hamburg to 1 box of Stove Top Stuffing. Add diced celery, and chopped onions to mixture. You can also add other veggies that you like too. Mix all ingredients together. This is so delicious...My mother makes it for me every Thanksgiving...I hope you enjoy it!!!

Mine is really simple and it is always a big hit.

I make the cornbread the night before. Crumble it the next day. Add sauted onions, peppers, and spicy sausage. Then chicken stock till it is moist. Cover with tin foil and bake at 350 till it is dried out enough.

Here's the one I stand by:

1 box Mrs. Culbritsons cornbread stuffing with seasonings
1 lb. turkey sausage, casings removed
1 large yellow onion
3 stalks celery
2 eggs, beaten
2 cubes butter or margarine
1 tsp fresh ground pepper
1 tsp kosher salt (opt.)
Turkey or chicken broth, heated.

Melt butter in large skillet and add diced onion and celery. Saute until translucent and add to dry stuffing mix. Saute crumbled turkey sausage and add to stuffing mixture. Add eggs, pepper and salt (opt.). Add turkey or chicken broth until stuffing is moist, but not mushy. At this point you can either stuff your turkey or place it in a baking dish to bake along side it.

To the traditional ones listed , I add some Italian sausage , a chopped apple, and chopped dried apricot that has been marinated in apple juice.
Just makes it different enough for people to notice , but everyone loves it. It also adds natural moisture.
