Their both "wheat" flour though?

all purpose has had nutrients taken out, so the whole wheat is better.

Yeah they are, the whole wehat has some extra stuff in it.
That is the health "which is better"
However if you mean which is better for what you are making.... Whole wheat flour will not have the same results if you bake with it, although it is kind of interesting and still good. For example cookies will be chewy and fluffy.
All purpose flour is made to be okay to bake whatever but it isn't as good as specialized, like pastry flour which is very fine for certain pastries, cake flour which is also fine for cakes...

Unbleached flour is still 'white flour'. It has had the germ and bran removed.

Whole wheat flour is healthier unless you are like me and cannot tolerate it.
