There's a cookbook called "La Dolce Vegan" by Sarah Kramer. There is a recipe in it for Tomato Walnut-Crusted Seitan. There are also recipes for seitan (wheat gluten). If you get a box of Arrowhead Mills Vital Wheat Gluten, you can make about two pounds of seitan. The Tomato Walnut-Crusted seitan (it's under Faux Fare and is called "chicken") is just delicious!
You can steam some veggies to go with it, such as haricot vert, and bake a couple of potatoes or a simple rice pilaf.
This is all time consuming. You have to simmer the seitan in the broth for about 50 minutes, and I have found that it tastes better if I don't use it the day I cook it. The recipe referenced also has an hour-long marinating time.
Here is a recipe I sort of invented. I just veganized a fessendjen recipe. You can get pomegranate molasses at a Middle Eastern store, or a gourmet grocery might carry it.
Puckery Pomegranate Seitan
2 tbsp oil
1 lb seitan, cut into chops
1 large onion, sliced
2 cloves garlic, minced
salt and pepper to taste
4 tbsp pomegranate molasses
2/3 C vegetable stock
1/4 C walnuts
dash of sugar
Fry seitan for about five minutes or until it starts to brown on both sides. Remove from pan and keep in warm place. Add onions, garlic, pepper, and salt and sauté until onion softens. Add pomegranate molasses, stock, walnuts and sugar and bring to simmer. Add seitan back to pan and coat with sauce. Simmer until the sauce thickens. Serve.

www.epicurious.com - this one is good for gourmet stuff, it's not all veg so you'll have to pick and choose a good recipe, but they have lots of really interesting recipes here.
www.foodnetwork.com - I like a lot of the recipes here because I have seen them made on the shows, but for the most part they are all pretty credible. Again, you'll have to search for the meat free ones but you'll find tons.
From experience, good ingredients to incorporate for gourmet veg foods are eggplants, portobello mushrooms, goat cheese, sweet potatoes, pastas, asparagus, spinach, puff pastry or phyllo.....yum!

The best way to make a lasangna not watery is to not boil the noodles. I use a "hot cheese" mixture to pour over the vegetables, tomato sauce and noodles (uncooked). The hot cheese is a combination of milk, ricotta, mozerella and white pepper. I'll look for the recipe and modify my message if I can find it. It really is the best, and easiest veggie lasagne I've had. It's just delicious.
