Roasted Eggplant and Tomato Panino
Serves 2
1 Loaf French Bread
1 Pint Sweet Cherry Tomatoes
1 Medium Eggplant
1 Bunch Fresh Basil, chiffonade
2 Slices Tofutti Cheese (optional)
Olive Oil
Salt
Pepper
Preheat oven to 350º.
Slice the tomatoes in half and place them cut-side up in a baking dish. Sprinkle with a generous pinch of salt and 2-3 tablespoons of olive oil. Roast for 70-80 minutes.
Once the tomatoes are in, prepare the eggplant. Slice the ends off the eggplant and peel off the skin with a vegetable peeler. Slice widthwise into quarter inch thick circles and place on a baking sheet in one layer. Sprinkle with a generous pinch of salt. Drizzle about 1/2 cup of olive oil (or more. for serious) over the slices. Bake in the oven for 35-45 minutes depending on how thick your slices are. The eggplant should be soft and browned.
Let the eggplant and tomatoes cool. Slice the loaf of bread into two equal portions. Slice each portion in half lengthwise without cutting all the way through. Rub the bread with olive oil and add the fillings:
Place sandwiches, open faced, into a 400º oven for 5 minutes, until bread is crispy and “cheese” is melted. When they come out of the oven, fold the top over and press down - the olive oil will soak into the bread and form a natural “dressing” for the sandwich.

I enjoy home cooked meals but if I were to choose one then I would say chili is a favorite. It's a home recipe but very delicious. I get lots of requests for mine.
I have a large stew/tamale pot I use for my chili. I think it's 12 quarts or something like that. I get a hunk of meat like a roast or something; about 1-2 lbs should work. Cube this into about 1/4 - 1/2 inch pieces. Big chunks are not preferable for chili. Mix together 3lbs of ground beef and 3lbs of hot jimmy dean sausage and brown it only 1/3 to half way. Put this in the pot. Dice 2 whole onions, 4 medium tomatoes, 2 large #10 cans of tomato sauce, 1/2 pound of kidney beans, 1/2 pound pinto beans. Dump all this into the pot and add Worcestershire sauce, soy sauce, chili powder, paprika, garlic powder, season all, salt, and pepper. Fill the pot with water to the appropriate height and cook for about 4-6 hours. Stir occasionally. It's ok to put more water than you might need because it will evaporate out and you will probably need to add more as it cooks. The key to this chili is around the last half hour of cooking add 1/2 - 1 cup of corn meal. This will thicken the chili to a nice consistency and color.

Quinoa stirfry
1 cup quinoa
2 cups veggie stock
1/2 cup chopped nuts
6 oz spinach
1/2 cup chopped tomatoes
1/2 cup shredded cheese
Toast nuts in dry skillet until fragrant-set aside. Toast quinoa in skillet until golden and fragrant-add liquid,reduce heat, cover and simmer 20min. Stir in spinach-cook just to wilt-add nuts, tomatoes, warm through. Mix in cheese and serve.
I have tried this with pecans, almonds, sunflower seeds, pumpkin seeds and pinon nuts. Also with parmesan, gruyere, cheddar, swiss and feta. My favorites are pecans/parmesan and pumpkin seeds/cheddar but they're all good.
