The best tasting is baked. Scrub the skins, and pierce them (prevents exploding). Bake in a 350 F oven for an hour for medium, or 1.5 hours for a large. Peel (use and oven mitt to hold it, it's HOT), and put some butter over it.

Bake the yams, then peel and cut into thick slices. Boil some butter w/ (brown) sugar and some orange juice in a pan...reduce the temperature and let it cook until it thickens...pour the glaze over yams and add some cinnamon (if you like).
PS: For a couple of pounds of yams, you'll probably need a cup of sugar, 1/2 cup butter and as much orange juice.

PAN COOKED SWEET POTATOES OR YAMS
4 med. size sweet potato or yams
1 tsp. olive oil or butter
1/2 c. water
2 tbsp. reg. or brown sugar
Dash nutmeg
Dash cinnamon
Dash allspice
1 tsp. lemon juice
1/2 tsp. vanilla extract
Peel potatoes or yams. Slice and layer with above ingredients. Cover frying pan and simmer on medium heat. Approximate cooking time 15 to 20 minutes. 4 servings.

i used to work on ships in the merchant navy and a lot of the ethnic lads used to like them peeled and thickly sliced bout inch thick and cooked in stock or milk with butter...like our fondant potatoes...
