I am freaking out. I am in Sweden on vacation and I ordered a beef filet thinking it was coming out dark on the outside and pink in the inside but instead the color and texture was reminicent of a chicken breast. However the taste was that of beef. Please, explain. I am confused. I just wanted a nice juicy steak.

It could be veal which is beef calf.

I can certainly tell you you will not find a "nice juicy steak" anywhere in Sweden; they just don't eat much mature beef.
"Bistek" is typically veal and is somewhat of a delicacy.
Pork is the most common, and least expensive of all meat found in Sweden.
Try some local dishes, rather than expecting to eat the cuisine of where you come from. Many fish dishes are absolutely delectable. Some come with a heaping helping of fried parsley, which is decidedly Swedish.
Also try reindeer chops, grouse souffle, or peel and eat shrimp.
If you explore the indoor food halls, you will discover foods Swedes eat every day. Ostermalms Torg in Stockholm is my favorite, and there is a wonderful little restaurant in the back corner next to a fishmonger's stall; they have the best shrimp I've ever eaten.
In Gamla Stan (Stockholm's Old Town), try "Latona", which is a very quaint restaurant which has a dining room in the catacombs under the city. The food is outstanding-- I've never had a bad meal there.

I live there, they do not aloud any hormones in cows food , the meat is as clean and free of preservatives, Sweden's food regulations are among the highest in the world.

and ... they do not grill steak as much as we do it in US, they kind of slow cook it... seems like they don't like the crusty stuff in the top of their steaks as much as we do it here. they cover the steak with a lip and let the steak cook in its juices, more like boiling water instead of nicely fry it!

It was probably in there longer than if it would have been pink on the inside. It doesn't surprise me if you say that it was dry.
