Your theory about insufficient protein sounds good to me. There might be other aspects of meat (iron? amino acids?) that you body wasn't getting, too.

Because meat is a bad habit. You may as well have asked why someone has an intense craving for alcohol when trying to stop drinking or why someone has intense cravings for cigarettes when trying to stop smoking. It's pretty much the same thing. It's at least psychologically addictive.
You have to think about what made you want to go vegetarian in the first place and see if you can't use that as a motivator to get over the cravings. You might also want to buy some analogues and cook those the next time you get a meat craving.

I never had the problem, but I did crave sugary foods on and off for years. I found that eating more fresh vegetables stopped my sugar cravings. The answer was really having my own garden. Then I could just snack on stuff and have all sorts of veggies available all year 'round without having to worry about paying for it.

Do as much as you can, get variety in your protien sources, even if youre getting what is considered the daily requirement in grams it may not matter if you are not getting the correct amino acid combinations, and don't give up on your first craving. Even if you cave in and eat meat, its ok, just get back on the horse right after. or perhaps you may want to use a more vegetarian cliche that doesnt exploit horses.

Apparantly a craving lasts a maximum of three weeks... once you get over this initial stage it's much easier. I used to love meat and ate it with every meal but now I don't crave it at all and can't even think of eating it again. If you feel strongly enough about your beliefs then you can give up meat. Try watching these videos and think of them whenever you crave meat. Maybe you weren't ready before but at least you tried. If you still feel strongly about it and have enough will power then you'll be able to get through it. Good Luck!

It's because you are so used to meat that it is a part of your system. If you always eat candy and you suddenly stop you get a rash.
