Yes... you can.
A local Kim Chi maker packs their stuff for sale in what looks like mayonaise jars so mason jars should work just as well, in not better due to the thicker glass.

I agree with "Stacy", and I am not Korean, I make it in bulk and do it in 1 liter, or 1 american quart jars, you just have to let it go through its intial fermentation, it will not burst the jars, but when you open them if they have some pressure in them you could be looking at a Kimchi facial.

Make it a batch let it go for a week in a cool place, and then re pack in jars, just make sure there sterilized and the lids are clean and in good shape, it will kee for up to one year (and the longer the better), just cut back on the korean chili paste if your going to keep it for a long time.

I don't see why not.. if it's "ready" (fully pickled?), though, you will want to keep it in the refridgerator (or outside if it's cold where you are), so that the kimchi won't spoil. If it's not ready, you can keep it out to let it pickle.
