First ask your friend if s/he eats eggs, dairy products, or fish ... some vegetarians eat one, two, or all three of those things.
Next, go shopping and get a tub of 'firm' tofu, and the widest selection of fresh vegetables you can get ... get root vegetables, and things like broccoli and cauliflower, cabbage, and some 'fruit' vegetables like tomatoes and avocado. Also get some good cooking oil (Canola is best) and some soy sauce. Take everything home and 'chop it' to about 1/2" square ... then in a deep fry pan or a wok, heat about 1/4 cup of the oil and toss in the vegies adding th tofu last. Season with about 1 teaspoon of soy sauce, but also put the soy sauce on the table in case someone wants more. Serve piping hot. Then tell your vegetarian friend that this is a 'time honored recipe' called Mess ... a vegetarian kind of Mess. I usually added small bits of meat, but the 'big thing' about making Mess is it is never the same ... and it is an excellent dish for a new vegetarian, because you can use ANY vegies, even ones you normally HATE, and they taste wonderful all mixed in with everything else.

Probably the easiest thing for you if you are used to cooking meat stuff is to make a spaghetti bologneise or something but use vegemince instead of the meat. Probably the most popular is quorn mince but check with her which brand she prefers. Alternatively you could do a nice bean salad with baked potatoes? A mushroom risotto? Veg stir fry? When shopping watch out for the hidden no-nos like gelatine (found in some puddings) and rennet (found in cheese). Good luck with it!

Check into the new ziplock steamer bags-they are wonderful. Also stirfry with tufu and such. Nice steamed veges with spices or herbs. Squashes,peppers,onions and a bit og garlic and italian herbs-you can steam those up in a bag in about 5 minutes. Also a nice eggless pasta with penne or just a nice tomato sauce or diced tomatoes and the same type of herb seasoning on it too-easy!

We make this yummy "frittata" in the cafe...
take some cooked rice n place in muffin pans....( pray some oil on first)
mix some egg,cream ,onion,spinach ,grated carrot n some pinenuts an pour on top of the spooned rice..
Bake 20 mins or until light golden brown...
Delicious....

How about making a big pot of chili? Just leave out the meat. It's easy and delicious.

Make a simple casserole and use veggie crumbles or strips instead of meat.

Make a stew with tofu, tempeh, or seitan instead of meat.

Make chili and crumble tempeh into it.
