Okay- everyone has had great suggestions, so I'll give you the Veggie Road Trip version (p.s. I'll stick to entrees. p.p.s. I'll leave off salad unless it's major.):
Subway- Veggie Delight Sandwich, Veggie Delight Salad, and Gardenburger patties for sandwiches (I suggest make a 'meatball' sub w/ the GB patty.)
Taco Bell- Any menu item you can sub beans for the meat. Personal fav? Ask for the Cheesy Gordita Crunch with beans instead of meat.
Burger King- BK Veggie, Tons of veggie sides. Really, I rock the BK sides, but the burger is good too (remember to ask for cheese.)
McDonalds- They suck, you really only have fries and salad
Wendy's- Baked Potatoes, salads, your basic sides
Steak and Shake- This is a hard one, you really can only do a grilled cheese sandwich, some sides, or plain spagetti
Chili's- Black Bean Burger, Guiltless Grill Pasta, Brocolli Soup, Southwestern Vegetable soup, classic nachos no queso, cheese quesadillas, Veggie Quesadillas, apps
Fridays- Veggie platter, some soups, Usually there is a noodle dish to amend
Applebees- The menu changes more often, but the Veggie Pizza is good. Usually there are 3 pasta dishes that you can add veggies to and take meat off of.
Bennigan's- Veggie Burger, soups
Olive Garden- Easy one: Minstrone soup, pizza, cappalini polmadoro, cheese ravioli, manacotti, plus you can add whatever veggies you want at no charge
These are suggestions of common places I eat at regularly. Remember, most places will let you make changes to any non-premade dish. If you ever are in Chicago, go to Orange for breakfast, Chicago Diner for lunch, and Ed Debevick's for dinner. The foods are totally worth the trip!

I have never actually had to leave a restaurant because i couldn't come up with some sort of veg meal, side dishes ala carte are your friend. It may mean eating onion rings and a side salad, but i will figure something out. As for restaurants that do good for veggie, and i will try not to be too area specific, thai, chinese, indian, ethiopian, sushi, generally any quasi-hip type place (whatever that means) has good veg alternatives- it kind of helps to live near a reasonably large city, there are a couple restaurants around me that cater to vegs specifically and i live in kansas city with its cattle industry roots so any big city will do. Oh yeah and fast food- chipolte is a favorite, subway is ok but somewhat limited, i dont eat a ton of fast food but most have at least a side salad kind of thing you can work with.

There are also some sites that tell you what vegan items you can get at chain restaurants. At Chipotle, for example, everything but the meat and the pinto beans (they have pork in them) are suitable for vegetarians. Nix the dairy, and the food is suitable for vegans. Subway's Veggie Delight is suitable for vegetarians, but only the Italian (white) bread is vegan.
You can also Google "vegetarian" and the town you live in to see what options there are.

It depends on where you live. I live in NYC and there are literally hundreds of purely vegetarian places. However, if you live in a less metropolitan place, your best bet may be going with regular restaurants and ordering salads and pasta dishes. Italian, Mexican, Chinese, Japanese, Indian, and Thai are all pretty veg-friends cuisines -- just check out restaurants online or by calling them.
There is a book I bought for a roadtrip called Healthy Highways. It outlines vegetarian restaurants, health food stores, and veg friendly places in every state -- that may be a great place for you to start looking.

Congrats on taking your first steps in becoming a vegetarian. It will be very rewarding, I promise. You have not specified where you are located, HappyCow is a great resource. As far as fast food, Burger King now has a veggie burger. Look into that.

Anyway to answer your VERY Good question, Ruby Tuesdays, TGI Fridays, Dennys, Red Robbin, CHilli's all have tasty veggie burgers on their menu. Even Burger king does!!
Subway has a tasty veggie patty, or their sandwiches with all the veggies are yummy too..
Asian restraunts are always a good bet..

well subway is pretty good for a quick vegetarian meal.
generally, i find that most thai and indian places will have actually vegetarian meal options, not just salads loaded with dairy :/
