I have the 60 GB PS3 and it would depend on what type of games you're talking about, whether it's PS1, PS2, or PS3 games. I have a little over 100 PS2 and PS1 game save files on my PS3, plus I have 4 other PS3 game files saved as well.
PS3 games are larger in size though and will take up more space. For example, on my PS3, Heavenly Sword takes up 3787 KB and Lair takes up 2198 KB. So basically the entire Heavenly Sword game file would take up almost half of an entire PS2 memory card.
I have all of those game save files plus other media such as a few songs, and about 70 photos and I have 42 GB left. It would depend on the size of the game file to determine how many games you could save on a PS3, but I say that the 60GB PS3 will be able to save all of your PS3 games that you will ever buy with the system.
