I have some recipes for cheese sauces but I was wondering about one thing though. I will be putting the cheddar cheese sauce over chicken and it will be baking in the oven. Should O prepare a cheese sauce and let it cool before putting over chicken to bake?

No need to let it cool. but really I haven't heard of cheese sauce with chicken I'm sure others have but although I love cheese sauce and I love chicken i don't think they are a good combination together. I'm not sure what you are doing with the chicken . is it small peices because you wouldn't want the sauce over large peices as the sauce would dryout before the chicken is cooked. so you would need a lid on it so it doesn't dry out to quicklyand not have the sauce to thick. Good luck with it. I think it would be interesting to see and taste it

If you are putting plain cheese on chicken and baking it from it's raw state then you might want to cover it to keep it from getting too brown. A cheese sauce would be less likely to brown if it is not covered and if the oven temperature is not hotter than 325 degrees F.

I prefer browning chicken on top of the stove and then finishing it off in an oven at 325F. I add sliced cheese to some dishes but don't put it on until the last 20 minutes of baking. It will stay supple that way.

It will not hurt to put a warm or hot sauce over chicken before you bake it. Cold sauce may be too thick to spoon on. I would suggest putting on either the sauce or the sliced cheese about 20 minutes before baking time is up. If you want it browned lightly you can always put it under the broiler for a few minutes, watching it very closely so it doesn't get too brown. Broilers can work to brown cheese very quickly once the brown begins to "show".

I don't think that's necessary as long as you're going to start baking the chicken shortly after you put the sauce on. I don't think it will noticeably affect your baking time either.

It's not a good idea if you're not going to bake it right away though.

I don't think it would be necessary to cool it... just cover the chicken so the cheese doesn't burn. Goodluck!
