2 pounds ground beef
2 eggs
1 medium onion, chopped
A couple of pinches of parsley
1/2 cup Italian bread crumbs
2 cloves garlic, chopped
Salt and pepper
8 ounces ricotta cheese
A couple of pinches of dried basil
1 (28-ounce) can of whole peeled tomatoes with basil, Italian Bread crumbs
1. Mix first 6 ingredients, salt and pepper to taste, and mold in standard-size loaf pan.
2. Scoop out the center of the loaf.
3. In a separate bowl, mix cheese and basil, salt and pepper to taste, and fill in the hole with this mixture.
4. Replace scooped-out meat to make a hat covering the cheese mixture.
5. Top with tomatoes. Bake at 350 degrees for 45 minutes.
6. Sprinkle bread crumbs over the top and bake another 15 minutes. Makes 6 to 8 servings.
Note: This meatloaf is very delicious and not your typical meatloaf. I use Winn Dixie brand whole plum tomatoes with basil. When I add the tomatoes , I crushed them. After the meatloaf is done, I drain the grease from the meatloaf and make a tomato gravy using the tomato juices, little cornstarch and water. Very Very good.

Clare's meatloaf- Maui Island Cookbook
1/2 c. Grape-Nuts cereal
1 pound hamburger
1/4 c. chopped onion
1/2 c. water
1 egg, slightly beaten
1/2 tsp. salt
Italian Seasoning to taste
Mix Grape Nuts and water; let stand for 2-3 minutes. Combine rest of ingredients; mix well. In a greased pan, shape into loaf. Bake one hour at 350'. To get moist loaf, cover with aluminum foil for first 30 minutes and then remove. NOTE: This meatloaf is good and VERY moist. I let it bake for 50 minutes.

I can guarantee this is the best meatloaf ever and the sandwhiches the next day are to die for! Now I don't cook with measurements, so do the best you can.

Ground chuck or good hamburger
ground pork (1/2 the amount of the hamburger)
plain bread crumbs (about a cup)
milk (about 3/4 cup)
egg
fresh ground salt & pepper
mustard
worchester sauce
ketchup, a big blob in with the meat (this is used in the meatloaf & on top)
garlic (only fresh)
carrots
celery
onion
olive oil or butter/margarine

preheat oven to 350.

Ok, toss everything but the vegies and olive oil in a big bowl and mix. Then cut vegies into small cubes and saute until nice and tender. Add the vegies to the mixture and blend. Put foil on a cookie sheet, put blob of meat on cookie sheet and shape into a nice oblong shape, plop ketchup on top and with your hand rub the ketchup over the meat to completey cover it, and bake until done. I don't know how long, I just check it after 1/2 hour. I cook for 12 of us, so I think ours bakes for about an hour.

Italian meatloaf

2 # ground beef or Buffalo
2 eggs
1/2 cup oatmeal or bread crumbs
1/2 tsp pepper
1/2 cup milk
1 tsp Italian spice
1 tsp Worcestershire sauce
mix well , take a piece of aluminum foil 12 inches long, spread out the meat as thin as you can. spread pepperoni slices on the 2/3's closest to you cover this area also with Mozzarella cheese. lifting the edge of the foil roll the loaf together. place in a greased cake pan or meatloaf pan. cover with ketchup sprinkle top With Italian spice. Bake for about 1 hour in a 350 degree oven. remove from oven let set for 10 minutes and then slice and enjoy. serve with baked potatoes and a fresh tossed salad and some bread sticks dipped in pizza sauce. makes the best meatloaf sandwiches because of the layer of cheese.

Roasted Vegetable Meat Loaf with Balsamic Glaze

Ingredients:
3 TBs olive oil, 1 lg zucchini finely diced, 1 red bell pepper finely diced, 1 yellow pepper finely diced, 1 yellow onion finely diced, salt and freshly ground black pepper, 5 cloves garlic finely chopped, 1/4 tsp red pepper flakes, 2 lg eggs lightly beaten, 1 TB finely chopped fresh thyme leaves, 1/4 cup chopped fresh parsley leaves, 1/2 lb ground pork, 1/2 lb ground veal, 1 lb ground beef chuck, 1 cup panko (Japanese) bread crumbs, 1/2 cup freshly grated Romano, 1 1/2 cups ketchup divided, 1 cup plus 2 Tbs balsamic vinegar

Preparation:
Preheat oven to 425 degrees. Heat the oil in a large saute pan over high heat. Add the zucchini, peppers, onion, and salt and pepper to taste, and cook until almost soft 5 minutes. Stir in the garlic and 1/4 tsp of the red pepper flakes and cook for 30 seconds. Set aside to cool. Whisk together the eggs and herbs in a large bowl. Add the meat, bread crumbs, cheese, 1/2 cup of the ketchup, 2 TBs of the basalmic vinegar, the vegetables, and mix until just combined. Mold the meatloaf on a baking sheet lined with parchment paper. Whisk together the remaining ketchup and balsamic vinegar in a small bowl then brush the mixture over the entire loaf. Bake the meatloaf for approximately 1 - 1 1/4 hours. Remove from the oven and let rest 10 min before slicing. Makes 6 servings.

Chef Notes: We chose to chop our vegetables a little larger than fine dice. And it mixed easier when using your hands, but you run the risk of over kneading. The balsamic vinegar dressing was not brushed on but instead, we drizzled it over the top and spread it out with the back of a spoon. Either way works well. If you leave it in the oven for a longer time (the glaze gets a blackened look), it gets a nice crunchy flavor that you may wish to keep, or discard.

A variation was made when only 2/3 of the chopped vegetables were incorporated into the meatloaf in the large mixing bowl. If you save the remaining 1/3, it can be placed onto the parchment paper surface first, and the meatloaf mixture placed on top. Then, of course, you apply the glaze, then place into the oven. You serve the meatloaf as a tiered dish with the vegetables on the bottom.

My mom (and I) make a great meatloaf. Some ingredients are approximate (but close!) because it's kind of just thrown together!!! Also, it makes a full size one and a small one or 2 med. ones.

Meat Loaf...

1 md. onion, coarsely chopped
1/2 red sweet pepper, chopped
1/2 cup milk
1 egg
6-8 drops "Tabasco" sauce
1/2 tsp. Lea & Perrins worstershire sauce
3/4 to 1 tsp. salt (to taste!)
1/4 tsp. pepper
1 tsp. dry mustard
2 handfuls seasoned dry stuffing cubes
1 3/4 lbs. ground beef
1 can, Campbell's mushroom soup

Mix first ingredients, including the stuffing cubes. Add beef and soup. Put into ungreased meatloaf pan(s) and cook til done. Optional: I like to get cleaned, whole mushrooms and stick them into meatloaf after 1/2 is in pan, then cover with rest of mixture... Cook average sized meatloafs 1 to 1-1/4 hr.(adjust time if making any smaller ones!) at 350, let sit about 15 minutes or so after out of oven.
**Great cold too with mayo! Mushrooms make it fall apart a little easier, but I love mushrooms!!!

Buy the way, did you buy the meat yet or just dreaming about a Delicious meatloaf sandwich with Tabasco sauce on a nicely Texas toast (no vegetables!)?

This is soooo good!!!

1 med onion, chopped fine
1 stick of marg or butter
5 C cubed whole grain bread

Saute all of these together.

1 pkg. GimmeLean ground beef style veggie protein
OR 2 # of lean ground beef
4 eggs, slightly beaten
1 t sage
2 C grated cheddar cheese
1 t garlic powder

Mix all ingredients and press into an oiled pan (not oiled if you use the ground beef)

Sweet and Sour Glaze

1/2 C each: Catsup, brown suger, and water

pour over the top Bake at 375 degrees for 45 minutes.

Meatloaf

3/4 lb ground beef
1/4 lb ground pork
1 tsp oil
1/2 ea onion -- medium, chopped
1 ea egg
1/4 tsp dried thyme
1 tsp salt
1/2 tsp black pepper
1 tsp ground mustard
1 tbsp tomato paste
1 tsp worcestershire sauce
1/4 tsp tobasco
1/4 c milk
2/3 c bread crumbs
8 - 10 slices bacon

Heat oven to 350F. Heat oil in a skillet and saute onion until softened. Set aside to cool.

Put meat, bread crumbs, parsley, and onions in a large bowl. In a small bowl mix together all moist ingredients and seasonings. Add to meat mixture and mix thoroughly, being careful, however, not to overwork.

Shape mixture into a loaf and wrap in bacon slices. Cook on a broiler pan for about 1 hour or until center registers 150F. Allow to rest at least 20 minutes before slicing.

Try this, It's easy and tasted great.
Mini Meat Loaf Cups
1 1/2 lbs. ground chuck
1 egg, lightly beaten
1 cup Ragu pasta sauce (reserve 1/2 cup)
1/4 cup seasoned bread crumbs
1/2 tea. italian seasoning
6 oz. shredded mozzarella cheese
In a large bowl, combine egg, 1/2 cup Ragu, crumbs and italian seasoning. Crumble beef over mix and using hands, mix well. Divide mix between a greased 12 cup cupcake pan, pressing mix onto bottoms and upsides of cups. Fill centers with cheese. Preheat oven to 375 degrees. Bake for 15-18 minutes. Drizzle additional Ragu over tops. Serve immediately.
To freeze: Allow to cool, place in freezer bags and freeze up to 3 months. To use; Thaw in fridge for 24 hrs. Microwave for 3-4 min.

Easy Italian Meatloaf
2 &1/2 lbs ground beef,2 large green peppers,1 16 oz can diced tomatoes,1 lrg sweet onion,chopped,4 slices bacon,1 &1/2 c Italian breadcrumbs,1/4 c grated parmesan cheese,2 tblsp garlic,1/2 tsp basil ,1/3 tsp oregano,1/3 c chopped parsley,1 tsp beef boullion,2 eggs,1/3 tsp black pepper,1/3 c ketchup ,onion and garlic powder to taste
Preheat oven to 375 . in large bowl combine meat ,eggs,seasonings and remaining ingredients except ketchup and bacon,adding breadcrumbsto mixture last . If meat is low in fat add up to 1 tblsp olive oil. Mix well .
Press meat into loaf shaped pan,forming a dome shape . brush top with ketchup and sprinkle with onion and garlic powder,salt and pepper. Cover with bacon slices. Baste occasionally with additional ketchup during cooking being carefull not to allow oven to get cold or additional cooking time will be required . If desired cover with thinly sliced onions. Bake 1 and 1/2 hours.
