Does anybody have any good pumpkin seed recipies? I have about a bowl full or so, and I plan on cleaning them and such. Any g ood receipes that'll give them some flavor?

ROASTED PUMPKIN SEEDS

This is a fun family project or rainy day activity.
Preheat oven to 250°F.

After removing as much pulp as possible from the pumpkin seeds, place the seeds in a colander in the sink and run cold water over them as you work to remove any remaining pulp. When the seeds are clean, drain them and place between two paper towels to dry.

In a large skillet, sauté 2 cups pumpkin seeds, 2 tablespoons butter or 1 1/2 tablespoons peanut or safflower oil and 1 teaspoon salt. (For an interesting flavor variation, try Morton's Hot Salt or use Seasoned Salt.)

Stir 3 minutes until seeds are well coated with butter.

Spread evenly on a cookie sheet and bake for 30 minutes.

Take a few out to try at this point (watch out-they will be hot so let them cool a bit first!)

Some seeds are larger than others and will take longer to bake.

If necessary, continue to bake 15 minutes longer or until lightly browned.

Place on a paper towel to cool.

Variation: After washing the pumpkin seeds, soak seeds for 1-2 hours in a mixture of 1 quart of water and 1/2 cup kosher salt. Be sure salt has dissolved. Remove seeds from water mixture after soaking and dry. Proceed as above.

SPICY ROASTED PUMPKIN SEEDS

3 c. pumpkin seeds
1 tsp. ground cinnamon
1/2 tsp. ground cloves
1/2 tsp. nutmeg
Salt to taste

Clean pumpkin seed and allow to dry at least 3 hours. Spray a flat non-stick cookie sheet with Pam. Spread pumpkin evenly on pan and sprinkle with seasonings. Bake at 375 degrees for 15 to 20 minutes, stirring several so seeds do not stick or burn. Watch carefully. Test with fork to see if done; when crunchy remove from oven.

1 cup sugar
1/2 cup water
1 cup hulled (green) pumpkin seeds, toasted
Preheat oven to 250°F. Lightly oil a large sheet of foil on a baking sheet and keep warm in oven.
Cook sugar, water, and a pinch of salt in a deep 2-quart heavy saucepan over moderately low heat, stirring slowly with a metal fork, until melted and pale golden. Cook caramel without stirring, swirling pan, until deep golden. Immediately stir in pumpkin seeds and quickly pour onto foil, spreading into a thin sheet before it hardens. (If caramel hardens and is difficult to spread, put in a 400°F oven until warm enough to spread, 1 to 2 minutes.)

Cool praline on baking sheet on a rack until completely hardened, then break into large pieces.

i just did some the other night, i washed the seeds, and then i put them on a Cookie sheet, pre heat the oven to 350, and turned off the oven, left the seeds in the oven for 30 minutes, turned back on the oven to 300 left the seeds in the oven for another 20 minutes, i also turned off the oven when it reach 300 degrees,.....oh before i put them in the oven i sprinkled them with seasoning salt,.....

wash the seeds until there is no pumpkin remnants on it, then put it on a tray that will go in either the oven or toaster oven, then put salt on it (be generous) and bake until they become golden, for the toaster oven just put it at a temperature in the middle, however i'm not sure what you set the over temp. at....then you eat!!! it's soooooooooo good

just soak them in heavily salted water for about a day then put them on a pan salt them some more and roast them
