Cooking under pressure changes the flavor and nutrients of in juice. Ever have 'fresh' apple juice compared to reconstituted Pasteurized concentrate?

It does alter the taste, not much maybe, but it does. Also, it's generally not necessary like it is for milk, so why bother with the expense?
