I dont really like fish but I love to catch them. Does anyone have any good recipes for cooking Steelhead that may eliminate some of the "fishy" taste?

Here are some good tactic's for gettin' that "fishy" flavor under control:

#1. Freshwater fish tend to taste like where they've been swimming. It's a good idea to remember this when you decide to take a fish home for supper!
Example: If you catch your Steelhead in a "ditch-creek" that smells like "baitfish & sewer" odds are your fish dinner (no matter how hard you try to disguise it), will only please the cat!

#2. Don't wait too long to "gut & fillet".

When I decide to take home a Trout or Salmon I will try to immed fillet the fish "on the spot" and put them on ice, (and I only do this WITH Trout & Salmon because I don't want ANYTHING to ruin the subtle flavor). This ensures a perfectly flavorful fish and an easy "ending" to a long fishing outing.

#3. Make sure (when filleting) to discard/cut-out all the "bloody areas" that you can. And remember that the "shoulders" of the fish will be less fishy than the stomach area.

#4. Soaking fresh fish in Buttermilk or Whole Milk will "calm" that fishy flavor. Soak 3-4 hours and you will notice a difference!

#5. Citrus fruits ,(Lemon, Orange, Lime,), can be an excellent way to "calm-down" fishy fish!
Marinate for 3-4 hours in fresh lemon juice,TSP olive oil, small diced Red Onion and black pepper!

#6. Using heavy spices (Blackened seasoning, Cayanne, Etc) can "mask" fishy fish. Rosemary, Cilantro, Garlic, Basil, Etc are excellent herbs to experiment with!

There is nothing like smoked fish! It will definately get rid of any "fishy" flavor and just tastes great. If you do not have a smoker yourself you can cook the fish on a grill using smoky wood. Keep the lid closed as much as possible to keep the flames down and the smoke in. Cook on an upper rack if possible, you want to cook it nice and slow so the smoke gets into the flesh.

Pan fry or bake with onions, lots of fresh dill, lemon juice, salt and a good splash of white wine. The wine will definately get rid of the fishy taste.

not sure what steelhead eggs are? sorry that was'nt the question. you could fry them in a little butter or scramble them with some finely diced onions.
