I love CCQ so I want to know a recipe to make my own at home. Thanks!!!

This was a favorite from the University Club in Houston... dating back to the 70's. Although I have other recipes, this is the one I always come back to.

1 med. onion, sliced thin
2 T. butter
1 ( 10 oz) can tomatoes with green chilis
1 ( 5 oz) can evaporated milk
1 ( 8 oz) loaf Velveeta, cubed

Saute onions in butter until limp. Add tomatoes with liquid and simmer for 10 minutes. Add milk. Stir until smooth. Add cheese cubes, stirring until all cheese is dissolved.

Easy Con Queso Dip

I have been making this for years. My recipe goes something like this.

1 Big block of Velveeta (I have tried real cheese, Velveeta works better)
1 small chunk of pepper jack cheese
1 small chunk of that Colby / jack cheese (the white and orange speckled kind)
1 large can jar of salsa (spiced to taste. I use hot)
1 package of frozen spinach
1 can of re-fried beans (for texture)
1/2 lb ground beef prepared with Mexican seasoning (optional)

Chop up the cheese and throw (not literally) in a crock pot. Add the salsa. Once it starts to get all melty add the spinach (follow the spinach's instructions to heat it) and the beans. Allow cheese to fully melt. Mix well

The last time I made this I browned some ground beef with some taco seasoning and added that as well, but that is a fairly new addition to my recipe. This makes a huge amount of dip, but surprisingly, once prepared, you can freeze and reheat the leftovers.

I have just started making this and it has been one big hit at parties.

~1 lb. ground beef, browned and crumbled
~1 lg. block of Velveeta (store brand works well)
~1 can Rotel tomatoes, your choice
~1 can Progresso Chicken Enchilada Soup, undiluted

Brown hamburger, drain and crumble. Place all ingredients in a crock pot at least 3 qt. size. Do not add any water. Heat on low to med. (depending on crock pot) stirring occasionally. If it is to thick once heated add water little at a time until desired thickness is reached. The first time you make this check it often so that it doesn't get to hot and curddle the cheese. The soup is what makes this so very good.

Velveeta and a can of your favorite chili. Cut the velveeta up into 1 inch squares pour the chili over it and microwave about 4 minutes. Stir and microwave another 2 minutes. I like to add diced green chili's and 1/2 C of salsa to mine as well.

I make the standard cheese dip with 1 lb velveeta + one can Ro-Tel tomatoes. Then, I add a small can of Wolf Brand chili without beans. Add some cumin and red pepper flakes for more spice!

You want the best or the easiest?

Since you asked for the easiest-chop up a block of Velveeta into cubes and then add a can of rotel w/ chiles and then melt over the stove at a low temp. Add milk/salt/pepper as needed-tasting as you add.

Mix cheese and salsa. Or Valveeta and chili and stick it in the microwave. Hormel Chili is always the best. Mmmm

the easiest is to cut a block of velveeta into cubes and put in a bowl, pour a can of chili over it and heat in the microwave or bake in the oven. top with sour cream and diced tomatoes.
