The religious symbol as a defense is dependent upon the victim's faith and beliefs, not the vampire's.
For instance, a non-believer holding a cross is screwed because it has no meaning to him.
A Jewish person could hold up the star of David to stave off an attack if he is a believer. The same holds true for a Christian holding a cross.
So, to answer your question, a Jewish vampire would be vulnerable to a religious symbol if its bearer is a true believer.

Yes, it will. In those vampire stories in which crosses have a protective function, the efficacy of crosses upon vampires is not supposed to be based upon the origin of the vampire but upon an innate value of the cross as a holy specific to Christianity.

Some other fool said:

WRONG. A Non-believer is NEVER screwed, because the non-believer doesn't need anything to repel the vampire! The atheist could just hold out his hand!

Maybe. It's a touch and go--it's scary because of all the times it's been used to persecute us, but in it's simplest form is just two sticks of wood stuck together that has nothing to do with our religion.
You'd be better off with a piece of ham (wink wink)

No, why change them? As long as the Vampire sunk his teeth in me gently till his moist red lips were tightly hugged around my neck sucking my blood, to feel his lips moving on my skin and hearing him moan as he tasted my warm deep dark blood. Let him be whatever he wants to be.
Hey it is Halloween.. right????? Have a frightful night!!

You would need Chuck Norris to throw some Star of David Ninja stars.

Nope, but a nice wooden stake would. Perhaps you could scare them off with bacon. I assume garlic works for all faiths.

Instead of garlic, wear a pork chop around your neck.
