Make Picadillo with ground beef, diced garlic, bell peppers, and tomatoes. Throw in a pinch of cumin and chili powder, and serve on tortillas, or over romaine lettuce with salsa for dressing. Cube and melt Velveeta to drizzle over top. Delish!

This is a favorite at our house.... easy too
Mexican Nacho Sopa
1 - 1 lb ground beef, cooked and drained
1 - med. onion, sliced
1 T - taco seasoning ( from the Lawry's seasoning packet)
1 can cheese soup
1 can ( 10 oz) tomatoes and green chilis , undrained
1 & 1/2 C. milk
1/2 C. shredded cheddar
warm corn or flour tortillas
Combine all ingredients except cheese and tortillas. Cook over low heat for 20 minutes. Stir frequently.
Top servings with cheese... I also add avocado slices when they are in season. Green onions and sour cream are good toppings, too.

Chicken Casserole
Preheat oven to 350.
Cooked, cubed chicken
stuffing mix, prepared as per instructions
cream of mushroom soup OR cream of chicken OR cream of celery OR a combo of your choice.
Spray a casserole dish with a cooking spray, layer each ingredient, I start with chicken then the soup mix then stuffing. Keep layering until dish is full, top with a little extra dry stuffing for a crunchy top. Sometimes I add mashed potatoes to the layers, you can also add mixed vegetables as a layer too. Cook until bubbly.

I made some panko crusted chicken last night that was fabulous and my husband loved it too.
You take about 5 medium to large sized chicken breast filets. and dust them in flour, then dunk in to 2 eggs slighlty beaten. Then dip the breast into the panko bread crumbs that have been mixed with parmesan cheese.
Pre-heat oven to 400 and lightly grease (use cooking spray) a cooling rack. Place cooling rack on top of a baking pan and then place each chicken breast on the rack.
lightly spray the top of each chicken breast with the cooking spray so that the tops will brown.
cook for 25 minutes or until chicken is done and tops are golden brown.
When done, pull pan out of the oven and put some tomatoe sauce on top and sprinkle with motzerella cheese of each breast. Place back into oven oven under the broiler until bubbly.
Serve over pasta.
You can add wasabe paste, cumin and chili powder to the tomatoe sauce for a spicy taste, we just wanted a more italian taste last night.
I cooked extra breasts so that I could re-use them tonight and make a calzone with the left overs.

EASY AND DELICIOUS BEEF STROGANOFF---
Get 1-2 lbs of either hamburger or beef tips
1 medium size tub of sour cream
1 box of lipton onion soup
1 can of mushroom soup
1 bag of egg noodles
Partially fry up the meat, pour in the can of mushroom soup, the sour cream and 1-2 packets of onion soup (I use 2) add 1/4 of the soup can full of water and stir. Cook on medium to low- stir occasionally while you make your noodles. By the time the water boils, and the noodles cook the stroganoff should be done. This is sooo good, people think it was a lot of work and hard to make---
Also, EASY CHICKEN AND DUMPLINGS/NOODLES
Get a large can of chicken broth (=to 3-4 cans of smaller chicken broth)
Couple of chicken breasts, or dark meat, legs whatever you have around...
1-2 packages of frozen noodles/kettle dumplings.
Pour broth in pan and add in 1/4 as much water as you did broth. Put oven on med-high***Add salt to taste. Cut up chicken in to bite size pieces, and put in broth. Once you get the broth and chicken to boil, add noodles as stated on instructions.
This is SOOO Good it tastes like Cracker Barrel chicken and dumplings. Feel free to contact me w/any questions! Both recipes take no longer than 20 minutes!!

My favorite simple recipe is hamburger casserole. It tastes even better as leftovers.
Brown 2lbs of ground beef in a skillet. Spread into the bottom of 9x13" baking dish. Pour a can of beef gravy on top and a can of mixed veggies. Make one envelope of Betty Crocker Creamy mashed potatoes according to box directions and spread on top. Bake at 350 for 1hr.

Never be bored cooking!!!! Cooking is to me is making love meaning I cook with love and understanding. I put my heart into cooking to make my food the best. One of my favorite dinners is a Sunday dinner. On Sundays my dinner is like this as followed: I buy some sweet potates at the store, cut them them wash them off, put them in the pot with cinnamon, sugar, nutmeg, and vanilla flavor plus you put a little water in pot, turned down the fire very low and let the potatoes cook until it is soft and it will make it own juices. Next one is the corn beef. The corn beef should cook for about two to three hours until the meat is just about to fall apart. The corn beef has its own seasoning in the package. For my self I always add my own seasoning such as Lawy's seasoning salt, lemon pepper, and I add little of vanilla flavor. Also make sure you put some water in the skillet and wrap up the meat with foil to cook. The third food is the cabbage. Make sure you wash the cabbage off good, cut the cabbage put it pot with a little water. In you cabbage if you like meats such as salt pork or couple pieces of bacon put it in the cabbage so it can cook with the cabbage. Add seasonings to your cabbage like a little black pepper, pinch of salt, pinch of red peppers or the crushed ones and a pinch of sugar. You can have some macronni with cheese. Besides the sweet potatoes for desert you can have a three layer chocolate cake or 7-up cake. For beverages add pop or your favorite red wine. Also appertizer you can a fruit tray, cheese & crackers, or cheese stix until the food is completely done. You have a good Sunday's dinner.
For a Saturday dinner you can make spaghetti with fish. You can cook catfish, perch, or whitening, what ever kind of fish you like. Make sure you galic bread or cheese bread sticks. Your desert can be Sara Lee Dutch Apple Pie. You can put the pie in the oven for about 45minutes at the most. Your beverage can be a pop or a juice or red or white wine.

i don't know the EXACT recipe but a quick search will do the trick. and it's easy.
but it's lemon and herb chicken. DELICIOUS!!
just don't use a lot of lemon juice. makes it tastes bitter.
