Specifically, flying AIr Canada between Vancouver and Hong Kong? If I carry a suit, can I also bring a bag?

Usually you can get away with it. Most carriers now will let you take a carry on and a "personal item" like a diaper bag, computer bag, a purse so you shouldn't have a problem. the last time i flew i had a computer bag and a big back pack and didn't get hassled by Air France (and they are some of the toughest about carry on bags and believe me i know i work for anther carrier but fly them often)

Depends on the size of the bag and if the flight is full or not.....talk to the airlines directly.
