PREPARATION:
Peel and cut potatoes into even strips. Soak potatoes in cold water for 1 hour. Fry in deep fat at 325° for 5 minutes. Drain. Increase heat to 375° and fry until French fries are tender and nicely browned.

As my culinary instructor many times said "till it's done" :)

The time depends on how the fries are cut.
For the best fries, fry at 300 till there are soft drain let cool turn you heat up to 375 and fry till golden brown.

or if you lazy like me most of the time 350 till golden.

frying time depends upon how big is your potato and wt kind of potato is being used. bz starchy potato,less starchy potato or waxy potato.. it doesnt matter the temperature, but you could better fry it at about 200 degree for 8 to ten minutes or untill golden brown colour.... but some other would rather eat soft fries which is literally spongy yellowish color fries.

Oil should be at 450 and you fry them until they are done. I like them crispy so I go a bit longer than maybe someone would who like them not so crispy. Time it takes totally depends on what kind of fries you're making and how thick they are.

375 is the optimal temp since that sears the outside and doesn't let oil into the fries. Any lower and the oil would be absorbed. Any hotter and the outside will be done before the insides.

Never mind about the temperature, it is kept in oil until the stuff is golden-brown fried, not burnt!

until they're done but it doesn't take very long at all so stand by watching. it goes fast so if you walk away they'll probably be overdone.
