For different people, it varies. Generally, since food is not urgently needed in survival situations, the average human can survive for several weeks without it. Sufferers of extreme anorexia are a good example. If the body is deprived of food, it will use itself as energy by using fat and then muscle; breaking both down to be converted into energy.

Water/liquids, however, are a different story... Survival is rarely seen past a week, due to kidney failure.
