I dont know what all you can or cannot eat on weight watchers so I will suggest using butter, canola oil, or extra virgin olive oil to cook them with. Canola oil is the best for you body out of all the oils that exsist.

You can take about a tsp of canola oil and put it in a skillet and add the seeds, cook about 15 minutes until they start to get a little soft, add salt if you wish. Then place in a shallow backing dish and cook at 250 for about 20 minutes, or until golden. When they are done you can add more salt if you wish.

When my family roasts Pumpkin seeds, all we do is wash all the pumpkin goo off the seeds, sprinkle lightly with salt and bake. Place the seeds on a cookie sheet and place them in a pre-heated 350 degree oven for about 20 minutes, flipping halfway through. When they are no longer moist they are done and they are delicious!! I am not sure the caloric amount put you can easily figure your points for the salt!! Good Luck!!

Sweet & Spicy Pumpkin Seeds1 egg white
1/4 cup natural cane sugar
1/2 teaspoon cayenne pepper
scant 1/2 teaspoon fine grained sea salt
1 cup fresh pumpkin seeds
Preheat oven to 375. In a medium-sized bowl whisk together the egg white, sugar, cayenne and salt. Add the pumpkin seeds and toss well. Drain off any excess egg white (using a strainer) and place seeds in a single layer across a baking sheet. Bake for about 12 minutes or until seeds are golden. Sprinkle with a bit more sugar and cayenne pepper when they come out of the oven. Taste and season with more salt if needed.

Black Tea & Butter Pumpkin SeedsYou can use many different types of tea here. I opted for a smoky black one, but you can go for one infused with other flavors, or even tisanes (I have a dried lime tea that I be would be interesting in this recipe). Choose a tea that is fragrant and has a pronounced flavor for best results.
1 teaspoon (black) tea
3 tablespoons unsalted butter, melted
scant 1/2 teaspoon fine grained sea salt
1 cup fresh pumpkin seeds
Preheat oven to 375.
Using a mortar and pestle or spice grinder, grind the tea into a fine powder. Set aside.
In a medium-sized bowl combine the butter and salt. Add the pumpkin seeds and toss well. Place seeds in a single layer across a baking sheet. Bake for about 12 minutes or until seeds are golden. Sprinkle with the ground tea. Taste and season with more salt if needed.
Makes one cup.

I just spread mine on a non-stick pan, cover with some seasoning salt and put in a 250 degree oven. Check after an hour until desired crispness. You don't need any oil.

All you have to do is once you have rinsed them off, you spread them out on a large tin baking sheet and sprikle them with a little salt or whatever seasoning you want then put them int he oven at about....350 for like 10 minutes.
