Mango Salsa (great over fish)
INGREDIENTS
1 mango - peeled, seeded and chopped
1/4 cup finely chopped red bell pepper
1 green onion, chopped
2 tablespoons chopped cilantro
1 fresh jalapeno chile pepper, finely chopped
2 tablespoons lime juice
1 tablespoon lemon juice
DIRECTIONS
In a medium bowl, mix mango, red bell pepper, green onion, cilantro, jalapeno, lime juice, and lemon juice. Cover, and allow to sit at least 30 minutes before serving.

Mango Crisp
INGREDIENTS:
5 cups ripe mangoes, peeled and thinly sliced, or mixture of sliced mangoes and apples
1 1/2 teaspoons cinnamon
1/4 teaspoon nutmeg
1 tablespoon lemon juice
1/4 cup softened butter
1/2 cup brown sugar, packed
1/2 cup flour
PREPARATION:
Mix sliced mangoes with 1 teaspoon of the cinnamon, the nutmeg, and lemon juice. Place in a buttered 10 x 6 x 2 inch glass baking dish. Set aside. Combine butter and brown sugar until well blended
Cut in flour and the remaining 1/2 teaspoon of cinnamon. Mix until crumbly. Sprinkle the topping evenly over mango slices. Cook in microwave oven 9 to 11 minutes on HIGH power, rotating a half turn after 5 minutes. Serve warm or cold, with whipped topping or ice cream, if desired.

This is simple but very good.
Cut the mango into chunks and add sliced fresh strawberries. Mix 1-2 tbs of any berry jelly/jam with 1tsp lime juice. Toss everything together.

Steamed Glutinous Rice with Coconut and Mango
1 pound glutinous rice (2 1/4 cups)
½ cup unsweetened coconut milk
1 tsp vanilla extract
1 large ripe mango, diced
½ tsp coarse ground white pepper
1 large banana leaf or cheesecloth
½ cup toasted unsweetened coconut
Wash rice until water is clear. Cover rice with cold water and vanilla extract and soak overnight. Drain rice and place in steamer lined with banana leaf or cheesecloth. If using leaf, make sure there is a 2 to 3-inch circle in the middle and small holes punched out. This will allow steam to pass through the leaf. Steam on high heat for 45 minutes, rice should be fully cooked but not mushy. Transfer hot rice to a large bowl and add peppercorns, mango and coconut. Serve while hot. Garnish with toasted coconut.

Mangoes are great fresh- just try mixing them with other fruits, like a big fruit salad with kiwis, mangoes, pineapple, oranges or grapefruit, strawberries and such- it'll be very colorful and taste awesome.
You can also try making a salsa, with mango, raspberry, jalepeno, sweet onion and cilantro. This dish goes great with grilled pork, shrimp, scallops- especially great with blackened recipes as the sweet/ hot flavors complement the smoky/spicy meat really well.
Mango smoothies are good too, just use orange or pineapple juice, mango, any berries you like, even yogurt if you like a creamier smoothie.

Puree them in a blender, pour into a micro strainer add water and mash out the juice with a touch of sugar. Then you'll have an Aguas Fresca.

don't know what it's called... but it's really really simple!
ingredients:
cream
graham crackers
sliced mangoes
crushed graham crackers
1/4 condensed milk (optional, if your short with cream or if you want it sweeter)
get a conatainer for your cake.. square probably then cover it with graham crackers then top it with cream then the mangoes (do it several times until your container is full).. it's just like making a sandwich.. then finish it off by putting crushed grahams on top... after making your cake, place it in the refrigerator...
this recipe is really good.. try it!!!

they are very sweet and as a result are hard to figure out what to do with them.. peel, cut them up and keep them cold.. surely there are some recipies on the net.. google it.. I bet you will find lots of suggestions.. good luck
