www.vegweb.com has a list of vegan-friendly merchants. You can find something lovely for your friend.
Or you can get her a gift cert to a vegan online store like Vegan Essentials (www.veganessentials.com), Pangea (www.veganstore.com), Alternative Outfitters (www.alternativeoutfitters.com), or Moo Shoes (www.mooshoes.com).

I, being vegan, would definitely recommend some t-shirt (or other item you think she would enjoy) that donates its proceeds to an organization that helps animals. You could probably find this on a site of the actual organization, if nowhere else.

Money, gift certificates, or make a basket of cruelty-free bath stuff (shikai, nutribiotic, pureology, jason, kiss my face, etc. Look in the beauty section of a local health food store.)
Or google "vegan" then whatever you're looking for, "shirts" "shoes" "belts" "food", whatever.
Jennifer- burt's bees isn't vegan, hence the "bees" ;)

The giftcard to Trader Joe's was a good idea or a giftcard to a vegan restaurant.

You wouldn't get something to "represent" an omnivore's eating meat, would you??
Most girls love stuff from Bath and Body Works, and they're cruelty-free, so I'd get her something from there.

It might be out of your budget but you can sponsor an animal in her name at Farm Sanctuary. Google it - it's a truly beautiful amazing place to great work with rescued animals.
