I became a vegan because the people here in V & V assured me I can just try to do the best I can and it's ok to call myself a vegan then.

#1 Heath. Recent studies show that vegetarianns have alot less cancer, heart disease, etc.. and many of the animals raised for meat are diseased, fed the wrong thing (cows being fed ground-up cows), pumped full of hormones, etc..This makes many people view meat eating as un-safe. Many of these people would not be vegetarians if they were living in the 1800's and the cows were spending their days grazing and healthy and no hormones
#2. Humane decision. Many people are appalled, not just at an animal being killed so someone can eat it, but the incredibly inhumane way that meat is raised and produced. The lives of these animals are torture from beginning to end.
#3. THe environment.. Beef is an extremely innefficient food source, and the demand for it, having so many cows, is ruining the environment

1. I'm totally against the inhumanity and cruelty which farm animals are subjected to. It is completely unnecessary and worse than barbaric. If people treated a dog or cat that way, it would be illegal.
2. I'm not entirely sure anymore that it is correct for us, as educated, civilized individuals to cultivate animals for food --animals are so much more than that. I'm not sure if it's the cultivation or just how they're being cultivated that I'm against --I'm still working on this one.
3. I'm absolutely certain that we should not be cultivating animals to the level of excess in which we do so. Killing to fuel the greed of others is just plain wrong.
4. Meat isn't even meat anymore really, beef is full of estrogen/progesterone and a couple of steroids for good measure and many cows are being fed meat in addition to God knows whatever else they're feeding them, pork is supplemented with ractopamine hydrochloride and chickens are fed a convenient meal containing certain antibiotics which as a fringe benefit--increase their weights. Every one of these substances are not only harmful to the animals themselved but are also harmful to human health as well. These substances are being used to fuel one simple thing--greed...more weight means more money at slaughter time.

there are a lot of reasons people become vegetarian. here are the most common:
health: a vegetarian diet is much lower in cholesterol than a diet that incorporates meat. meat is known to be responsible for a variety of health problems including heart disease.
economics: meat is expensive, it is far more cost effective to make your meals with vegetables, grain and fruit.
environment: most of the grain produced around the world is funneled back into the meat industry to feed animals used for consumption. on average (cows being more, chicken taking less) it takes about 7 lbs of grain to produce 1 lb of meat. obviously you could feed more people and destroy less of the environment if that food was going to humans instead of food animals. then if you take into account the carbon and methane emissions from the animals and their transport you have even more environmental damage.
ethics: animal welfare is also a big concern for many vegetarians. factory farms treat their animals as objects rather than living feeling animals. the animals lead tortured lives before they are slaughtered painfully and sent to freezer sections in supermarkets. this also includes animals killed for the fur and leather industry, as well as animals used in entertainment and vivisection. this is the reason i am vegetarian, and it really makes me sad that people who are aware of what goes on continue to eat meat and use animal products.
religion: some religions advocate a vegetarian diet, or at least limit the meat intake.

A lot choose not to eat meat because the thought of eating an animal is disgusting, some are brought up that way by their parents and have never tried meat so they don't know what they are missing. vegans usually have a poor diet and need supplements.

Originally I became veg because I respect life, love animals & don't want to cause or contribute to unecessary suffering. This is still my main reason but I also appreciate that it is better for my health & better for the health of the planet.
Since this is for your food tech assignment, I'd like to add that there are *many* wonderful dishes that can be made without using animals or animal "products" & 1000's of fruits, vegetables, grains, spices etc. while most cultures only eat a few different animal species.

Vegetarians don't eat any meat.
Vegans don't eat any meat, + they don't eat any animal products, such as milk (and therefore cheese, yogurt, sour cream or chocolate containing milk, or cookies containing milk), eggs (and therefore no cookies containing eggs), honey (and therefore no sweets containing honey). Also, no gelatin as it includes animal something - and this can also go for vegetarians as a no-no.
Depends on how strict you want to be. Thus, vegans can also refuse to wear any leather clothes, or animal fur coats.
Some medicines may contain extracts of animal something, such as those fish oil supplements of Vitamin E - and well, vegans as well as vegetarians will refuse such a product.
I am a vegetarian. Both because I never liked meat much, and because I care for animals. Also cause it's healthy.
Vegan - it's too hard for me to be. I drink milk, I eat yogurt, honey, milk chocolate... I just do the best I can.

The fourth big one is Religion. Many people do not eat meat because it contradicts their faith (i.e. Many Buddhists do not eat meat because it causes the death of an animal for their enjoyment).

1. I read a review of "Fast Food Nation" that mentioned cows soiling themselves in fear as they enter the rendering plant. It wasn't the soiling (feces) that got to me, it was the abject terror of the poor animals.
2. All flesh rots after death. Freezing it doesn't stop the decay. So meat is dead, rotting flesh.
