I am visiting him in Chicago next week and I need a nice dish to cook/prepare for him.. any ideas?

The Best" Vegetarian/Vegan Chili
Serves 6-8

Ingredients

1 large onion, chopped
1 green pepper, sliced
2 celery stalks , chopped
1-2 garlic cloves, minced
1 large can of tomatoes (aprox. 28 oz or 850 grams)
1 can of baked beans (aprox.14 oz)
1 can kidney beans (drained) (aprox.14 oz or 425 grams)
1 can of corn (small or large, to preference)
2 tsp. Chili powder (10 mil.)
1 tsp oregano (5 mil.)
1 tsp cumin (5 mil.)
½ tsp hot pepper flakes (2 mil.)- optional


Saute onion, pepper, celery and garlic.
Once all the vegetables and garlic are cooked add
remaining ingredients. Heat through.

To cook a great vegan meal for him you would have to shop, and then cook in his kitchen. If I were you, I would go to the online vegetarian restaurant and health food guide, www.happycow.net and find a place to get good take-out vegan food, or better yet, take him to one of the restaurants listed there.

A ratatouille is totally vegan and easy to make. There are many versions. I've tried this one, it is pretty good.

You could make some minestrone soup!

Boil some whole wheat spiral noodles (half the box).
Saute some sqaush in a medium saucepan, then add a can of veg-all (drained), a can of dark red kidney beans (drained), and a can or diced tomatoes (un-drained). Let that simmer and then add one cup of water.

Combine the veggie/soup with the noodles and you are done!

you can serve it as a side for that vegetarian chili that sounds good or the ratatouille
