It really depends on how hearty the appetizers are and how hungry your guest are. I wold make at least one of the selections fairly hearty so that the guest who are hungry do not try to fill up on the other other hors'dureves.

I like to put out about 4 different types of appetizers in addition to the classic chips and salsa and/or chips and cheese. That would be for about 6 adults.
A great thing to use to make it super simple is to buy frozen appetizers from your local grocery store, Trader Joe's or the like. This eliminates a lot of clean up, and stress. You can then just pop them in the oven.
Be mindful of cooking styles, and times.
This is considering you are serving dinner later.
If not, I would have the same variety, but up the amount to replenish what is being served. Figure 8-10 hors d'oeuvres total per person.
This way guests can continue to graze throughout the night.

If all you are serving are appetizers then you need to make sure you have enough to help absorb the alcohol (esp if driving to a dinner location). Plan on 5 portions per person but to make it easy on yourself you may want to create a buffet of dips, cheeses, fruits, vegetables and a variety of breads. set small plates around the station and be sure to have appropriate serving utensils. If you will not be dining after then consider including a mini sandwich it will help make the table more filling and give people something to help slow down the drinking. Good Luck!

Well.. As many as you like,
maybe around four of five different choices to save them from starvation during the party as people tend to get very hungry during parties.
Remember you might need to refill the containers they are in because people will eat them fast, so have some spare
(just in case)
