Personally I don't do that any more but in the past my favorite munchies were nachos that I made myself. Some torrtilla chips, vegetarian refried beans, vegan sour cream, hot salsa, and a few jalopeno peppers.

I don't partake of the herb in question myself, but you could still hang around Taco Bell at midnight ordering the entire vegan portion of the menu (since this involves removing ingredients from almost everything on the menu and recombining them, it could also be a source of great amusement when you're baked and absolutely everything is funny.)
Other than that, there's plenty of vegan munchies. You might just have to stock up ahead of time because you can't get Tings (sort of vegan cheetos, so good when you need a salty, greasy fix) at 7-Eleven. If I had a case of the midnight munchies, you might find me baking a batch of cookies.

I never partake of the herb, as I really don't need an appetite stimulant, but I do get insane salt cravings around that time of the month. I'm also more of a Chipotle girl than a Taco Hell girl as Chipotle makes it easy for vegans. Sadly, they are not open late. I love Terra Chips Sweet Potato Chips, these chocolate tortilla chips from Food Should Taste Good (a very faint hint of chocolatey goodness, but the salt I crave), Green Mountain Gringo chips, and sometimes soy jerky.
Smart vegans know to keep a stash for when the cravings hit.

Toffutti BETTER than pecan ice cream is awesome!
I also enjoy wild oats lemon sandwich cremes and UTZ all natural regular potatoe chips

If you have a craving for salty, savoury stuff, try nuts - they have heaps of protein and will satisfy your cravings! For sweet stuff, a tub of tofu icecream.
