Tough call. Rice is lower in protein than wheat, but rice protein is of a higher *quality* because it contains more lysine than wheat protein. Other great plant sources of lysine are legumes. Grains provide 50% of the protein in a person's diet. Potatoes are lower in protein than any of the cereals, so they would be an inferior choice as a staple. That doesn't mean they're unhealthy - they're a good source of potassium, iron and other nutrients.

In all cases, whole grain is definitely better than white. This is the deciding factor.

The HEALTHIEST staple food for me is bread. It is rich in carbohydrates but also rich in fiber, vitamins and minerals. Unlike rice, some varieties has a large amount of sugar. But the healtiest variety for me is the black or brown rice they are being grown inorganically so you're sure that there are no pesticides or chemicals in it.. ^^

I don't have any recipes but my advice to you would be to, have any meal that you normally eat that has meat in it, meatless. Like Spaghetti or Tacos, you can replace the meat with Meatless Crumbles. For a Healthy Sandwich, replace canned tuna with chickpeas and use other things you would normally put in a tuna salad like chopped pickles, celery etc.. Serve with Pita Bread or Carrot and Celery Sticks. And Vegetarian Chili, which lasts for days! Hope I helped!

Are these considered "staples"? They are all starches. How can you have mashed potatoes on hand at all times?
