Hey there! I'm having some friends over for dinner next week, and despite my lack of baking skills (I can cook, I just don't have the patience for baking) I really want to make a homemade dessert. We're just having wine, pasta and salad for dinner...any thoughts on recipes?

Choclate Eclair Cake--

This is a simple in expensive recipe that i have made for family and friends tons of times and it always goes over great. I suggest making it once ahead of time and making sure it works out perfect. Plus the best part is no baking! Shh, dont tell anyone!

What you will need:

One Box of graham crackers
One package of vanilla pudding
Milk for Pudding
One Conatiner of Cool Whip
One container of chocolate frosting

Make Pudding, simple enough so far. When pudding is set. fold in the Cool Whip. When you have them mixed well, set it to the side and get you cake pan.

Take the cake pan and put a layer of graham crackers on the bottom. then put enough of the pudding mixture down to cover with a thin layer. This is the one part you could mess up on. I have been tempted in the past to put too much pudding mix in and that makes the cake too soupy, it won't set right. So only put a layer that is about twice as thick as a graham cracker, maybe a 1/3 inch at most. Continue layering the crackers and pudding mixture, until you run out of crackers. CRACKERS ON TOP AND BOTTOM. There will probably be a bit of pudding left over (feel free to snack on it.)

Next put the frosting in the microwave for about 15-25 seconds, until it is melted enought to pour it on top. When it is pour it on top and smooth it over the top.

The last step is very important. Put the cake in the fridge for about 3-5 hours, the longer the better. If you make it the night before you will be golden! this will allow the crackers and pudding to merge into a wonderful cake.

If you're eating Italian, it sounds like an Italian ice is the perfect dessert. Here's a recipe for grenata.

To 2 cups water add 1 cup sugar and do not stir after the sugar is dissolved. Bring to a boil and boil 5 minutes exactly. Add 1 cup fresh squeezed lemon juice (or other juice, espresso, etc.). Freeze in cubes (it never gets really hard), then mash cubes with a potato masher and serve in sherbet glasses. Genuine Italian ice has large crystals, rather like a snow cone.

I've posted this before, but it's really easy.

Hot Fudge Pudding Cake
Ingredients:
1-1/4 cups granulated sugar, divided
1 cup all-purpose flour
1/2 cup HERSHEY'S Cocoa, divided
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup milk
1/3 cup butter or margarine, melted
1-1/2 teaspoons vanilla extract
1/2 cup packed light brown sugar
1-1/4 cups hot water
Whipped topping
Directions:
1. Heat oven to 350°F. Combine 3/4 cup granulated sugar, flour, 1/4 cup cocoa, baking powder and salt. Stir in milk, butter and vanilla; beat until smooth.

2. Pour batter into ungreased 9-inch square baking pan. Stir together remaining 1/2 cup granulated sugar, brown sugar and remaining 1/4 cup cocoa; sprinkle mixture evenly over batter. Pour hot water over top; do not stir.

3. Bake 35 to 40 minutes or until center is almost set. Remove from oven; let stand 15 minutes. Serve in dessert dishes, spooning sauce from bottom of pan over top. Garnish with whipped topping. About 8 servings.

You could make a dump cake. They're SUPER easy and most people really like them. They're light and would go good with a light meal.

This recipe is designed for kids to bake. It's incredibly easy with no mixing involved. Canned fruits are dumped into a baking pan, topped with cake mix, butter, and nuts, then baked. The result is something in between a cake and a cobbler, and amazingly delicious. Adults will also love this recipe.
INGREDIENTS:
1 (20 ounces) can crushed pineapple, undrained
1 (21 ounces) can prepared more fruit cherry pie filling
1 (18.25 ounces) box yellow cake mix
2 sticks of butter or margarine, each cut into 12 slices
1/4 cup chopped nuts (your choice - optional)
PREPARATION:
Preheat oven to 350 degrees F (325 for glass baking dish). Have a 9 by 13-inch baking pan ready.

Dump undrained pineapple baking dish or pan and spread it out evenly.

Using a spoon, dump globs of cherry pie filling evenly on top of the pineapple.

Sprinkle the cake mix evenly over the cherry and pineapple layers.

Cut butter into slices with a butter knife and place slices evenly over cake mix.

Sprinkle nuts on top if you're using them.

Bake for one hour. Use heavy oven mitts to remove the dump cake from oven or let your older helper do it.

To serve, scoop cake out with a large spoon like a cobbler, and dump it on a nice plate. A scoop of vanilla ice cream is delicious with dump cake. Serve warm or cold.

Yield: about 10 to 12 servings

Depends on what you like. Personally, its fall, so I would make a cobbler or crisp with leftover fruit. Recipes below:
CRUMBLE TOPPING:

Combine the following in a KitchenAid bowl

1 cup all-purpose flour
2/3 cup white granulated sugar
2/3 small pecan bits (or walnuts)
1/2 cup rolled oats (Quaker Oats)
1/2 tsp. cinnamon
pinch nutmeg
pinch salt
-----------------------------
Add:

4 ounces (1 stick) butter, softened

Mix dry ingredients together. Add butter and thoroughly combine until the texture is like crumbling moist sand. For best results, freeze in airtight container until you are ready to use it. Do not thaw for use. Sprinkle frozen topping directly on top of crisp and promptly put crisp in oven.

FRUIT FOR CRISP:

Now, the quantity depends on what size container you are using. I am going to estimate this for a 9x12 inch Pyrex baking pan. You can use (about) 8 apples peeled/cored/large (1inch cube) chunks, (about) 8-9 peaches peeled/cored/large chunks (1 inch cubes) or enough other fruit to fill the pan (pears, berries, a mixture any of these, etc). Toss fruit with (approximately) 1/4-1/3 cup brown sugar, pinch of salt, pinch of nutmeg, and pinch of cinnamon. Put in sprayed (but not floured!) baking dish. Put frozen crumble topping on top. Put in pre-heated 325-350 oven. This is all relatively approximate. Bake for 35-45 minutes.

The nice thing about cobblers: you can make and freeze the topping ahead of time (or multiply the recipe times 3 to make one large batch, so you always have crumble topping). You can make and freeze the fruit ahead of time. You can prepare the fruit, put it in the pan, put frozen topping on and FREEZE THE WHOLE THING. If you freeze the whole thing, just increase the baking time by 10 minutes or so. Another great thing: timing is easy for this. Preheat the oven and then start makingthe topping. While its freezing, you can peel, core and make the fruit filling. Put it all together, bake, and since it takes 45 minutes, you can make dinner in that next time frame. Pull the cobbler out of the oven when you pull dinner out of the oven. Let it sit on top of the stove to keep warm while you eat, and it will be the perfect temperature when you are ready for dessert! Serve with Vanilla Ice Cream or fresh whipped cream

Try melon balls (use two types of melon, like cantloupe and honeydew) with a little chopped mint, marinated with just enough Triple Sec to coat, and chilled for about 2 hours.

Simple and elegant, plus it'll go with what you're serving.
