They are called sizzle plates or sizzle platters. You can buy them by theirselves or with the heatproof underliner.

I can't believe not one person has really answered this. I really wanted to know this too. I went to Ruth's Chris the other night and lifted up the plate to see the emblem. It read "Tuxton" on the bottom with a picture of a little black bow tie. I dug around and found this.
Tuxton AMU-500 Vitrified China AlumaTux Square Plate, 11-1/8" x 11-1/8", Pearl White in Packs of 12.
I found them on Amazon for $145 for a set of 12. I saw them on the Webstaurant Store for a little bit more.
I am waiting for them to come in the mail. I'll update if it turns out not to be the plates, but I'm fairly certain.

Any ironstone type dinnerware is oven safe and can be used to serve up a steak sizzling hot. I very seldom serve food on a cold plate. You can get it just about anywhere that sells dinnerware. Here's a walmart link.

Try a restaurant supply such as Smart & Final. Don't know what they're called, but know what they are.
