I found an online recipe for homemade ginger ale (sugar, water, yeast, flavor), and decided to make some. I have a few questions. The recipe used a 2l bottle, but i didn't want that much so i used a .5l bottle instead, dividing all ingredients by 4. Will this have any adverse effects on the soda? also, there was a warning that there will be alcohol in the finished product. If i just left it out for like a week would i end up with some kind of carbonated alcoholic drink? Is there a high risk of other stuff being in the bottle that could make me sick (i rinsed it out with hot water before hand, but...)?

I don't see why the same ratio would affect anything.

I don't know exactly how long it takes to ferment into a strong alchol.

You need to make sure everything is sterile first. When hubby gets out Mr. Beer everything is soaked in mild bleach water then rinsed in the dishwasher.

Smaller batch: no problem
Alcohol: not much, especially if you use bakers' yeast
Stuff in bottle: better to rinse with a dilute bleach solution and then lots and lots of water. Chance of getting bad-tasting ginger beer is much greater than chance of getting sick.

use a sanitizing solution on the bottle otherwise there might be wild yeasts or bacteria that will affect the flavor, but nothing that will make you sick. Also, fermentation puts out a lot of Co2, if you're using a sealed bottle it might explode.
