A freind of mine makes one that a) looks creamy b) has as much garlic kinck as any mortal can stand.
She is a vegan chef and wont give me the recipe. I am a cooking clutz - so I know I can't copy it unless i have some idea what I'm doing....

All I can tell you is that it has Sunflower oil, Garlic, three kinds of pepper (white, black, red) a dash of veggie worcheshire, and some liquid aminios in it....

Anyone have any idea how it gets creamy? there has to be somekind of process to make it that way, right?

Any suggestions greatly appreciated.

I've got a few vegan dressing recipes here for you. What makes dressings creamy generally is the addition of mustard and then emulsifying it with the oil by whisking it.

FRENCH DRESSING

INGREDIENTS:

* 3/4 cup vegetable oil or olive oil
* 1/4 cup lemon juice
* 1 tablespoon sugar
* 3/4 teaspoon salt
* 1/4 teaspoon paprika
* 1/4 teaspoon dry mustard
* 1/4 teaspoon pepper
* 1 clove garlic, halved

PREPARATION:
Put all ingredients in a jar with a screw-top lid. Cover jar and shake vigorously to blend well. Chill dressing for 8 hours or overnight and remove garlic before serving. Shake well before using.

Orange Balsamic Vinaigrette
NGREDIENTS:

* 2 tbsp balsamic vinegar
* 1/4 cup olive oil
* juice of one orange (approx 1/4 cup)
* 1/2 tsp salt
* 1/4 tsp pepper

PREPARATION:
Combine all ingredients except oil in medium sized bowl. Slowly, while whisking briskly, add oil and combine well.

Raspberry Vinaigrette

INGREDIENTS:

* 1/2 cup raspberries, fresh or frozen
* 1/4 cup apple cider vinegar
* 1/4 cup balsamic vinegar
* 2 tsp sugar
* 1 tbsp dijon mustard
* 1/4 cup vegetable oil

PREPARATION:
Add all ingredients, except oil to a blender or food processor and puree until smooth. Slowly add oil until well combined.

Easy Vegan Orange Mustard Salad Dressing Recipe

INGREDIENTS:

* 3/4 cup orange juice
* 1/3 cup mustard
* 1 cup olive oil
* salt and pepper to taste

PREPARATION:
Whisk or blend together all ingredients thoroughly.

Tahini "Goddess" Dressing

INGREDIENTS:

* 1/2 cup tahini
* 1/2 cup apple cider vinegar
* 1/4 cup soy sauce
* 1 tbsp lemon juice
* 1/2 tsp salt
* 3 cloves garlic
* 1/2 cup water
* 2 tbsp dried parsley
* 1 tbsp sugar
* 1/2 cup oil

PREPARATION:
Add all the ingredients, except for the oil to a blender or food processor and puree until smooth and creamy. Slowly add oil until well mixed. Dressing will be thick, but you can always add a bit more water if you prefer a thinner consistency.

You've certainly gotten a number of good salad dressing recipes, but have you ever tried just plain fresh lemon juice or lemon juice mixed with a little olive oil. The lemon juice is quite good on green salads and obviously has no calories. Here is a quick salad dressing for Caesar salad. Ingredients: 2 cloves garlic 1 tbsp lemon juice 1 tsp vegetarian Worcestershire sauce 1 tsp onion powder 1 tsp Dijon mustard 1/2 cup olive oil dash salt (optional) Preparation: Place all ingredients except oil in a blender or food processor. Turn the machine on, and slowly add the oil, processing until dressing is smooth and creamy.

I have no clue about the dressing itself (although it does sound absolutely wonderful), but I can tell you one of the most common thickening agents used in cooking (regardless) is corn starch.

A little corn starch (like a teaspoon per bottle of dressing) will make something thick over time, as it sets. It's commonly used in heated dishes, but you can use corn starch in cold things too (such as salad dressings).

You might try experimenting with that. =D
