I live at about 5000 feet and baked potatoes seem to take longer than they should. Maybe, it's the elevation?

I mean baking in the oven. Maybe I should start them in the microwave to compensate.... It's just really hard to time dinner when the potatoes are done like 20 minutes later than I thought.

It is the altitude!! It does take longer up here on the hill to cook things.

If you take a candy thermometer and put it on a pan of water and bring the water to a boil, it will not be boiling at 212F, it will be lower. But it will take longer to reach the boiling point than it would at sea level.

It is also the atmospheric conditions that cause some things to cook longer than might be expected.

Shouldn't matter.
Wrap a 3/4# potato in foil & bake 1 hour in a preheated 350 degree oven.

Usually it's only over 10,000 feet elevation.

I nuke my baked potatoes on high for about 8-9 min. each, depending upon size. Add more time for more than 1 potato (like 12-15 min.)

I think that depends on if your cooking in the micro on in an oven. We know that water only boils at a higher temp at higher altitudes so if you are boiling them then yes it would take a longer time.

I think it has more to do with temperature and the size of the potatoes. Red potatoes normally take less time and taste better.
