I need a good seasoning for microwaved veggies. I usually use mrs dash and soy sause, but hubby has been dianosed with pre-diabeties. What is a good flavorful seasoning. OH, hubby hates vinager of any kind. veggies include asparagas, broccli, califlower, beans, and carrots.

MICROWAVE VEGETABLE MEDLEY

1 med. bunch broccoli, cut up
1 sm. head cauliflower, broken into flowerettes
1 med. zucchini squash, cut in 1/4" slices
1 med. green pepper, cut in 1/4" strips
1/2 c. fresh mushrooms, sliced
1/4 c. butter, melted
Seasoned salt
Lemon pepper

Place vegetables in 9" to 10" round dish or pie plate in circular fashion in order listed. Pour melted butter over vegetables. Sprinkle with seasoned salt and lemon pepper, as desired. Cover with plastic wrap. Cook in microwave on full power for 5 minutes, or until crisp tender.
Can substitute or add additional vegetables such as carrots, beans, pea pods, or water chestnuts. Can also sprinkle cheese on top.

Dieters can substitute 1/4 cup water for the butter.

MICROWAVE VEGETABLE MEDLEY

1/2 green bell pepper
10 fresh mushrooms
2 summer squash, sliced
2 zucchini squash, sliced
1 sm. yellow onion, sliced
2 stalks broccoli, break into flowerets
1/2 head cauliflower break into flowerets
1 stick Promise butter
Garlic salt to taste

Arrange vegetable in 3-quart microwave dish. Place squash and onion on bottom, mushrooms on top. Sprinkle garlic salt. Cut butter into pats, place on top. Cover with plastic wrap. Vent on two opposite corners. Microwave 10 to 12 minutes on high.
Vegetables will be crunchy. Do not overcook.

VEGETABLE MEDLEY - MICROWAVE

1 head cauliflower
1 bunch broccoli, 1 1/4 - 1 1/2 lbs., cut in spears
3-4 carrots, diagonally sliced 1/4"
1/2 c. melted butter
1/2 tsp. garlic salt
1/4 tsp. pepper

On 15" round glass or ceramic dish place head of cauliflower in center. Arrange broccoli and carrots around the outside.
Pour butter over vegetables. Sprinkle with garlic salt and pepper. Cover with plastic wrap turning back one edge to vent. Microwave on High for 17 to 19 minutes. Let stand, covered, 5 minutes. Vegetables should be crisp but tender. Serves 6 to 8.

Soy sauce has problems because so many people are sensitive to soy products. Try using balsamic vinegar instead. Yes, I know hubby dislikes vinegar of any kind. Add some sugar to it, and he won't know it's balsamic vinegar.

I make up my own rub for barbecuing, and my wife grabbed it by accident. Turns out it's great for on veggies, too.

Mix
2 tablespoons cinnamon
1 tablespoon onion powder
1 tablespoon paprika
1 tablespoon black pepper
1 tablespoon sea salt
1 tablespoon cumin

Cinnamon is incredibly good for diabetics, although the word doesn't seem to have gotten out yet. I originally put the cinnamon that rub for that reason. Turns out that you really need 1 gram of cinnamon daily or so, and the rub would be a drop in the bucket, but I like the taste, so it stays. (I don't think you can eat a gram a day of cinnamon, so I buy capsules now. There are two types of cinnamon, cassia and "real" cinnamon. Most of what is sold in the US is cassia, and that's the kind you want.)

I love brown butter. Just put whatever amount of melted butter you would put on your vegetables in a small saute pan. Turn the burner on low and let the butter melt. Leave it on the burner until the butter turns a light brown color. It won't take long and watch it carefully because it goes from brown to burnt very quickly. The browned butter will have a nutty flavor and is delicious on any kind of vegetable. It also is especially delicious on cooked angel hair pasta. Toss the pasta with the butter and add some poppy seeds to the pan as well. That's our favorite side dish...

we steam veggies in the microwave almost every night. We just spray them (after cooking) with the Smart Balance Spray and a touch of ground pepper.

Asparagus gets a little lite Mayo on top of it.

You can also buy low(ish) sodium soy sauce. It helps SOME.


Have you tried the microwave steam pouches yet? I don't want to buy them if they're not worth it!
