How long do you cook pumpkin seeds, and at what temperature?

Ahh one of my favorite fall treats!

~Rinse seeds just to remove large chunks of pumpkin (they burn in the oven)
~Pour a small amount of oil (olive or vegatable - you can use butter, you get a buttery taste) and coat seeds completely
~Salt evenly
~Spread evenly on cookie sheet
~At 300 degrees cook for 40 minutes - turning every 10 minutes or so to ensure even cooking

I roast mine in a 250 degree oven for 45 minutes. By then they should be completely dry and lightly browned.

If you'd like to try something nice, combine 1/2 teaspoon pumpkin pie spice, 1/4 teaspoon salt and 2 teaspoons sugar and set aside. Heat 1 tablespoon vegetable oil in a pan over medium high heat. Add the roasted seeds, and 4 teaspoons sugar, and stir witha wooden spoon until the sugar melts...about 1 minute. Then add them to the pumpkin pie spice mixture. Allow to cool before eating and store in an airtight container.

I just cook until they're brown. Easiest to just pan fry/roast in a little oil. Medium heat. Can get a little smoky so open the window or turn off the smoke alarm. It was pretty embarassing when I was doing this with my kindergarten class and the alarm went off :)
