We have a small office of 6 people so I thought I'd make caramel apples for Halloween......I know to buy kraft caramels, but have no clue what else goes into it, including what type apple to buy!!

Being a southern girl, I would like to roll them in crushed pecans so please include directions for that as well....

For just 6 people, make something really amazing. Make the caramel. It's easy. And really make this a homemade treat.

1 1/2 tbsp. butter
1 1/2 cups light brown sugar
6 tbsp. water
Popsicle sticks
8 to 10 apples
2 cups toasted pecans, chopped.

Pick a crisp hard apple. There are many choices. We often do tiny lady smith apples, and then do lots of small apples for a dessert treat. Try Macoun, Honeycrisp, Gala, etc.

Melt the butter in a heavy-bottomed saucepan over medium heat. Add the brown sugar and water. Stir until it has a smooth consistency. Gently bring to a boil, then cover and simmer for 3 minutes, until the pan's sides get steamy and the mixture is thin but somewhat sticky. Remove from heat. This will thicken as it cools, which is the whole idea.
Place the chopped nuts on a sheet or parchment or in a shallow dish. Pierce the center of each apple with a Popsicle stick, then swirl in the caramel syrup until coated.
Roll the apple in the chopped pecans.
Place the apples on a greased cookie sheet to cool and harden. Refrigerate for at least 1 to 2 hours.

Lots of variations, of course. You can make caramel from granulated sugar, but that's a slightly trickier process if you're new to the game. This is MUCH MUCH better than melting Kraft bits. Eat up!

Introduction
One of the easiest ways to make caramel apples is to simply dip apples in melted caramels. Makes four apples.
Instructions
Difficulty: Moderately Easy
Things You'll Need

* 2 tbsp. water
* 4 firm apples
* chopped nuts (optional)
* microwave-safe bowls
* chocolates (optional)
* baking sheets
* 14-oz. bag caramels
* 4 popsicle sticks

Step One
Buy good, firm apples such as Granny Smith.

Step Two
Wash apples, remove stems and dry with a kitchen towel.

Step Three
Push one stick into the center of each apple. Push into the top of the apple, where the stem would be. Set apples aside.

Step Four
Unwrap caramels and place with the water in a large microwaveable bowl.

Step Five
Microwave on High until caramels are melted, stirring every minute.

Step Six
Remove caramel mixture from microwave.

Step Seven
Hold each apple by the stick and dip into hot caramel sauce, turning to coat. Let excess drip back into pan. Scrape caramel off the bottom of the apple with a knife, or use the edge of the bowl.

Step Eight
Place coated apples on a greased baking sheet and put in refrigerator for 15 minutes or more, until caramel is set.

Step Nine
Store caramel apples in the refrigerator.

Tips & Warnings
* While the caramel is still warm, roll the apple in nuts or make a candy face.

* After the caramel has set, drizzle the apple with melted chocolate for a special treat.

* Apples will keep for about two weeks in the refrigerator.

Ingredients
1 package (14 ounces) caramels
2 tablespoons water
6 wooden craft sticks
6 medium Granny Smith apples
Chopped toasted pecans, walnuts or roasted peanuts
Colored sprinkles



Directions

1. Place caramels and water in medium heavy saucepan. Cook, stirring frequently, over medium-low heat until melted and very hot.
2. Insert stick into stem end of each apple. Place nuts in shallow bowl and jimmies in another shallow bowl. Dip apple into caramel, tilting saucepan until apple is coated; let excess caramel drip back into saucepan. Remove excess caramel by scraping bottom of apple across rim of saucepan. Immediately roll apple in pecans and/or sprinkles. Place, stick side up, on baking sheet lined with waxed paper. Repeat with remaining apples. Rewarm caramel, if needed. Refrigerate at least 10 minutes or until caramel is firm.

Serves 6

Melt the unwrapped caramels.

Put sticks on the apples and dip them in the caramel.

Put them on wax paper to cool off.

Done.

The bag of caramels has the recipe on the back.

I just buy mine at the grocery store. These days there is a choice of carmel, some red colored cinnamony based (like red hots for valentines), and most recently one with an orange coating (I suspect might be pumpkin flavor).

recipe is on the bag of caramels.... my little hint, buy twice as many as it says, the damn stuff sticks to the pan and you lose half of it! :) mmmmmmmmmmm, pan scrapings... LOL
