Calas Fried Rice Balls
6 tablespoons flour
3 tablespoons sugar
2 teaspoons baking powder
1/4 teaspoon salt
1/4 teaspoon vanilla
2 cups cooked rice
2 eggs
1 pinch nutmeg
cooking oil
powdered sugar
Mix together the flour, sugar, baking powder, salt, and vanilla.
Thoroughly mix the rice and eggs together in a separate bowl.
Add the dry ingredients to the rice and egg mixture.
When thoroughly mixed, drop by spoonfuls into the hot deep fat (about 360 degrees F) and fry until brown.
Drain on paper towel.
Sprinkle with powdered sugar and serve while hot.
Other variations are to serve with honey.

Easy Broccoli Rice Bake
1/2 cup celery, chopped
1/2 cup onions, chopped
1/2 cup margarine
1 can condensed cream of mushroom soup
1/2 cup water
1 (8 ounce) jar processed cheese spread
1 (10 ounce) package frozen chopped broccoli
1 (7 ounce) package precooked rice
Cook celery and onion in melted margarine until golden.
Combine soup, water and cheese spread.
Thaw broccoli in your microwave or any other easy method, hot water works.
Cook rice according to package.
Combine all ingredients and place in a greased 2 qt casserole dish.
Bake in 350F oven for 45 minutes.

Make Chinese Fried Rice (beef/pork/shrimp/chicken or vegetable)

This is a basic recipe for fried rice that you can add to as desired. If adding other ingredients, increase the number of eggs to 3.

Ingredients:
1 - 2 green onions
2 large eggs
Salt to taste
Pepper to taste
4 tablespoons oil for stir-frying
4 cups cold cooked rice
1 - 2 tablespoons light soy sauce or oyster sauce

Preparation:
Wash and finely chop the green onion. Lightly beat the eggs with the salt and pepper.

Heat a wok or frying pan and add 2 tablespoons oil. When the oil is hot, add the eggs. Cook, stirring, until they are lightly scrambled but not too dry. Remove the eggs and clean out the pan.

Add 2 tablespoons oil. Add the rice. Stir-fry for a few minutes, using a wooden spoon to break it apart. Stir in the soy sauce or oyster sauce as desired.

When the rice is heated through, add the scrambled egg back into the pan. Mix thoroughly. Stir in the green onion. Serve hot.

Left over Rice Cakes

Yummy way to use up left over rice

1 cup cooked rice
1 egg, beaten
1/4 cup cheese (optional)
1/2 small onion, chopped
1 teaspoon garlic, minced
1/4 teaspoon red pepper flakes (optional)
onion powder (optional)
parsley (optional)
1-2 tablespoon oil

combine all ingredients except oil and place in fridge for at least 30 minutes, then form small patties.
over med. high heat warm oil, then fry patties for about 5 minutes on each side.
Be careful when flipping, they sometimes break but still are tasty!

Chilled Rice Salad

INGREDIENTS

* 1 (6.9 ounce) package chicken-flavored rice and vermicelli mix
* 1 teaspoon vegetable oil
* 12 stuffed green olives, sliced
* 4 green onions, thinly sliced
* 1/2 green pepper, chopped
* 2 (6.5 ounce) jars marinated artichoke hearts, drained, liquid reserved
* 1/3 cup mayonnaise
* 1/2 teaspoon curry powder

DIRECTIONS

Prepare rice mix according to package directions, except substitute 1 teaspoon oil for butter called for. Cool. Add olives, green onions and green pepper; toss to mix. Cut the artichokes into quarters and add to rice mixture; set aside. In a small bowl, combine mayonnaise, curry powder and reserved marinade; blend well. Pour over rice mixture; toss to mix. Cover and chill for at least 2 hours.

Rice Casserole
INGREDIENTS

* 2 cups instant rice
* 1 (15 ounce) can condensed French onion soup
* 2 (10.75 ounce) cans condensed cream of mushroom soup
* 1/4 pound butter, cubed

DIRECTIONS

1. In a 9x11 inch microwave safe dish, mix together the rice, French onion soup, mushroom soup and butter.

2. Cook in microwave oven on high power for 10 minutes or until boiling. Decrease power to medium, stir and cook for 20 minutes. Serve when all liquid is absorbed.

Mexican Fire Rice
INGREDIENTS

* 2 2/3 cups water
* 1 1/3 cups uncooked long grain white rice
* 1 pound ground pork breakfast sausage
* 1 (16 ounce) jar picante sauce
* 1 (8 ounce) container sour cream
* 8 ounces Cheddar cheese, shredded

DIRECTIONS

1. In a medium saucepan, bring the water to a boil. Stir in the rice. Reduce heat, cover, and simmer 20 minutes.

2. Preheat oven to 350 degrees F (175 degrees C).

3. In a skillet over medium heat, cook the sausage until evenly brown.

4. In a medium baking dish, mix the cooked rice, cooked sausage, picante sauce, and sour cream. Top with Cheddar cheese.

5. Bake 20 minutes in the preheated oven, until cheese is bubbly.

How to Make Fast and Easy Fried Rice

So you want to learn how to make fried rice, but you don't want to spend a lot of time or money to do it. Well, you've come to the right place.

There are a few things you'll need before you can make fried rice. I only list them here for the starving college student with few utenils and cookware to work with.

1. Big pot. Obvious? Maybe. Some would use a pan, but it'll just be plain messy that way.

2. A way to make rice. I'd say you needed a rice cooker or steamer, but then this wouldn't be very easy all of a sudden, would it? If you have a steamer, great. If not, you can always make your rice in a pot.

3. Something to stir the rice. This is just self explanatory.

4. Knife.

5. Bowl.

Ingredients. To make the absolute bare minimun of fried rice, you'll need ingredients 1-4. It won't taste or look the greatest, but you may be able to pass it off as fried rice to your friends if you're very convincing.

1. Rice. Whatever brand. For two servings, use half a cup of rice. Just remember, the rice will expand. (Really, some people forget...)

2. Egg. One egg per half cup of rice is my rule.

3. Olive oil. Any oil will do, although i feel olive or canola oil is the healthiest. One tablespoon should be enough.

4. Soy sauce. Rule of thumb--any Asian meal needs soy sauce. You'll be right 70% of the time.

5. Green onins/chives. You'll need two stalks per half cup of rice.

6. Meat. If you want meat, use some. Generally, i precook the meat before i add it. This recipe will not include instructions for adding meat, as it will only get complicated.

7. Frozen green peas/other veggies. These do not have to be frozen, but by simply saying "frozen" i make the receipe sound that much easier to handle.

8. Pepper, sesame oil, etc. To taste.

Procedure. This is only a rough skeleton of how you should do this. Modify it as you wish.

1. Make the rice. Then let it sit. It is important that the rice is not so freshly made that it's hot and steaming. You need rice that has cooled down to room temperature or close to it. You could even make the rice and refridgerate it overnight if you prepared.

2. Scramble the egg in the bowl. Don't cook it yet!

3. Cut the green onions into little pieces. You'll know how.

4. Put the oil in the big pot and turn on the heat.

5. When the oil is hot, scramble the egg.

6. About when the egg is done, add the rice.

7. Try your best to break up the rice.

8. Stir that for a few minutes, then add your veggies and green onions.

9. Keep stirring until the veggies are no longer frozen.

10. Add your soy sauce slowly. Give a little splash and then stir. You want to give the rice a nice light brown color. You also don't want to make it too salty, so taste it after you've stirred in the splash of soy sauce. Add as much soy sauce as you want. Don't add too much because it'll eventually start to make things a bit soggy.

11. The water from the frozen veggies and the soy sause will slowly evaporate, so stir until you think it's the right consistency for you.

I love rice. You can make sweet rice by adding melted butter, fried rice by adding peas, carrots, and onion with chicken, pork , or beef. Or you can make chicken and rice by adding a little yellow safforin with chicken and chicken broth. Even spanish rice by adding tomato boullion, onions, and bell peppers.

Dump beef stew over it.


Put it in a bowl and cover with cooked cream of chicken soup.
